The estate

Located in the heart of the Côte de Nuits in Prémeaux-Prissey, Domaine des Perdrix was taken over in 1996 by the Devillard family, winegrowers for five generations. Now run by Amaury and Aurore Devillard, the estate extends over approximately 15 hectares, including near-exclusive ownership of the Premier Cru Nuits-Saint-Georges Aux Perdrix and a parcel in Echezeaux Grand Cru. Renowned for the quality of its Pinot Noir, Domaine des Perdrix also produces a rare Chardonnay cuvée in the Hautes-Côtes de Nuits, completing a range focused on the refined expression of the terroirs of Burgundy.

The vineyard

The Bourgogne Hautes-Côtes de Nuits blanc comes from a small 0.45-hectare parcel on the heights of Prémeaux-Prissey, on a limestone plateau at an altitude of between 300 and 400 metres. Facing due east, the Chardonnay vines grow on clay-limestone soil with a predominance of limestone. They were planted in 2009 and supplemented with a few vines in 2017. This altitude and soil type favour a gradual ripening of the grapes, preserving freshness and minerality.

Vinification and ageing

The harvest of the Bourgogne Hautes-Côtes de Nuits 2025 is carried out by hand, in small crates, in order to preserve the integrity of the grapes until they reach the pneumatic press. In keeping with the estate's recent vintages, the wine is aged for several months in stainless steel tanks, in order to showcase the aromatic purity of the Chardonnay as well as the freshness characteristic of this Hautes-Côtes terroir.
