Tasting notes
Colour
The colour reveals a brilliant ruby hue, dark and endowed with crystalline clarity.
Nose
The nose reveals a typically earthy profile, opening onto aromas of blackcurrant and black cherry, subtly rounded out by delicate touches of leather.
Palate
The palate stands out for its structure of silky, refined tannins. It offers lovely intensity on flavours of red and black berries, while retaining a juicy freshness that stretches into a long finish.
Food and wine pairing
This red wine pairs beautifully with scrambled eggs with truffles, grilled red meats such as beef or lamb, or a lamb tagine with preserved lemons. It also works very well with beef bourguignon, mushroom-based dishes, wild fowl, and aged pressed-curd cheeses.
Service and storage
The Nuits-Saint-Georges Village 2023 can be enjoyed from 2025 and will continue to evolve favourably until around 2034. For optimal storage, it is recommended to keep it in a cool cellar with a temperature between 10 and 13 degrees.

The elegance and structure of a Nuits-Saint-Georges wine
The estate
Acquired in 1996 by the Devillard family, marking the true birth of its independent identity, Domaine des Perdrix is located in the heart of Burgundy, France. Now run by Amaury and Aurore Devillard, the estate spans around a dozen hectares. The domaine is particularly renowned for its near-monopoly on the "Aux Perdrix" climat and its philosophy centred on controlled yields and optimal grape ripeness. This unwavering rigour has enabled it to establish itself as a leading reference within its appellation.
The vineyard
The plots dedicated to this wine are located in the northern part of the Nuits-Saint-Georges appellation. The vines, with an average age of 35 years, benefit from an ideal south-east exposure and are planted at a high density of 10,000 vines per hectare on clay-limestone soils where clay predominates, offering excellent water retention and rich minerality.
The vintage
2023 stood out for its generous and particularly warm weather conditions. This climate allowed the fruit to reach optimal ripeness while preserving a natural balance, ensuring lovely energy and mineral freshness.
Winemaking and aging
The grapes for the Nuits-Saint-Georges Village 2023 are hand-harvested, followed by rigorous sorting. After 80% destemming, the berries undergo a few days of cold pre-fermentation maceration. Fermentation is triggered using indigenous yeasts, accompanied by manual punching down. The wine is then aged for 18 to 19 months in French oak barrels (30% new wood), before finishing with a two- to three-month rest in neutral tanks.
