Tasting
Colour
The colour reveals a pale, luminous yellow hue, enhanced by delicate green reflections typical of its youth.
Nose
Highly intense, the bouquet first reveals aromas of fresh citrus such as lime and grapefruit, closely intertwined with pronounced mineral notes of flint and chalk. With aeration, scents of white flowers, green mango and subtle herbaceous touches unfold with elegance.
Palate
The attack is lively, with remarkable mineral tension. The palate offers a silky texture that perfectly balances the precision of its structure. Flavours of fresh, crisp fruit intertwine with a deep, geological minerality, leading to a particularly long, persistent finish, underlined by fine, invigorating bitter notes.
Food and wine pairing
This white wine pairs beautifully with fine seafood such as roasted lobster or sea bass carpaccio with citrus zest. It also pairs very well with delicate white fish, fresh goat's cheese, as well as refined vegetable dishes such as courgette ravioli with lemon.
Service and storage
To fully appreciate Pur Sang 2022, it is recommended to serve it at a temperature between 10 and 12°C. Decanting for an hour and a half, or opening the bottle a few hours before tasting, allows it to express itself fully. This wine will reveal its full potential from 2026 onwards and can be cellared favourably until around 2038.
The authentic expression of a great Loire terroir
The estate
Founded in 1982 by a visionary former racing driver, Domaine Didier Dagueneau is located in Saint-Andelain, in the heart of the Loire Valley. This estate of around 12 hectares revolutionised the local winegrowing approach through meticulous plot-by-plot work. Following the founder's death in 2008, his son Louis-Benjamin Dagueneau, alongside his sister Charlotte, now runs the estate. They carry on a quest for excellence and absolute independence, producing wines of remarkable purity, renowned worldwide for their authentic, uncompromising expression of terroir.
The vineyard
This cuvée comes from the La Folie lieu-dit, a south-facing plot located near the winery. The vines, aged between 25 and over 60 years old, thrive on soils composed of clay, limestone pebbles and pure flint. Vineyard work here is exceptionally demanding, with a high density of labour allowing for meticulous care and hand-harvesting. As a mark of independence, the entire production has been classified as Vin de France since 2017.
The vintage
2022 forms part of a series of vintages marked by climate change. Weather conditions favoured a very advanced ripeness of the berries, presenting new challenges throughout the growing cycle to preserve the natural balance and freshness of the grapes despite particularly mild temperatures.
Winemaking and ageing
The grapes for Pur Sang 2022 are hand-harvested in small crates during the coolest hours of the day. After very gentle pressing, the juice undergoes strict settling to retain only the fine lees. Fermentation takes place slowly. Ageing then continues for 12 to 18 months in large wooden vessels, such as 320-litre barrels and half-muids, without systematic stirring, in order to preserve clarity and aromatic complexity.
