Tasting

Colour
The glass reveals a deep ruby hue, showing a beautiful visual intensity with dark reflections.

Nose
The aromatic bouquet is complex, dominated by pure aromas of red and black fruit. Subtle spicy notes intertwine with a very characteristic minty touch.

Palate
The attack is lively and dynamic, supported by a beautiful acidic backbone. The mid-palate reveals spicy flavours and a refreshing hint of mint, enveloped by ripe, silky tannins. The finish lingers with persistence, offering a beautiful mineral expression.

Food and Wine Pairing

This red wine pairs wonderfully with roasted poultry such as duck, or game like pheasant and venison. It will also beautifully complement beef dishes in sauce, fine charcuterie, warm savoury pies, as well as full-flavoured aged cheeses such as brie or reblochon.

Service and Storage

For optimal tasting, it is recommended to serve this wine at a temperature between 14 and 16°C, taking care to decant it one to two hours before serving. Built for ageing, it can be kept in the cellar and enjoyed until around 2044.

The Singular Expression of a Great Terroir by Domaine Faiveley

The Estate

Founded in 1825 by Pierre Faiveley, Domaine Faiveley is a true institution in Burgundy. Historically based in Nuits-Saint-Georges, this illustrious house now oversees a vast vineyard spanning the Côte de Nuits, the Côte de Beaune and the Côte Chalonnaise. Currently led by Erwan and Eve Faiveley, who represent the seventh generation at the helm of the estate, the family carries on an ancestral know-how while modernising its practices. The estate stands out for its impressive collection of prestigious terroirs and its strong commitment to environmentally responsible viticulture.

The Vineyard

Acquired in 2003, this 2.37-hectare monopole enjoys a privileged location within the Beaune appellation. Nicknamed internally "the Côte-Rôtie" due to its due-south exposure, this terroir is characterised by gravelly, stony soils that are very low in clay. This unique composition ensures excellent drainage and heat retention, promoting optimal ripening of the grapes. The vines, planted between 1980 and 1998, receive meticulous care and rigorous management.

The Vintage

The year was marked by above-average rainfall, leading to strong mildew pressure. However, thanks to the exceptional natural drainage of the plot's gravelly soils and rigorous canopy management, the vines were able to withstand these climatic challenges. The sunny exposure allowed the berries to reach full phenolic ripeness despite the weather's unpredictability.

Winemaking and Aging

The making of this cru receives particularly careful attention, combining technical precision with respect for the fruit. The process includes a period in oak barrels, which subtly enriches the aromatic palette with delicate spicy notes while refining its tannic structure to give it a silky texture and great ageing potential.
