Tasting
Colour
The colour reveals a purple hue of medium intensity.
Nose
The aromatic bouquet proves intense and complex, exuding scents of well-ripened red and black fruits such as cherry, cranberry and redcurrant. Floral notes, orange peel, spices and vanilla intertwine with subtle mineral and earthy touches.
Palate
The palate offers a perfect balance between richness and firmness. Animated by lovely vibrancy and refined tannins, the palate unfolds flavours of crisp red fruit. The whole stretches elegantly towards a long finish marked by a persistent minerality.
Food and Wine Pairing
This great red wine pairs wonderfully with rich, flavourful dishes such as pan-seared foie gras, roasted feathered game or a herb-crusted rack of lamb. It also enhances a beef fillet with mushrooms, a traditional coq au vin, as well as characterful cheeses such as Époisses, Reblochon or Cîteaux.
Service and Storage
To fully appreciate this Corton Grand Cru "Clos des Cortons Faiveley" Monopole 2023, it is recommended to serve it at a temperature of around 16°C. Possessing excellent aging potential, this wine requires a few years in the cellar to reach its full expression and can be enjoyed until around 2055.
The Elegance and Minerality of a Burgundy Grand Cru
The Estate
Founded in 1825 in Nuits-Saint-Georges, Domaine Faiveley is a historic figure of Burgundy. Now at the helm of the estate, Erwan and Eve Faiveley represent the seventh generation of this family lineage. The estate oversees a vast vineyard of 120 to 127 hectares spread across the region's most prestigious appellations. A pioneer and guardian of tradition, the family was notably behind the creation of the famous Confrérie des Chevaliers du Tastevin in 1934. The estate also stands out for its environmental commitment, having fully converted to organic farming.
The Vineyard
This wine comes from a 2.76-hectare plot located on the Corton hill, within the Aloxe-Corton appellation. An exclusive family property since 1874, this monopole benefits from a south-southeast exposure. The vines thrive on shallow soils composed of limestone, marl and clay, enriched by the presence of ferruginous oolite. This unique terroir, combined with a microclimate offering good drainage, promotes optimal grape concentration.
The Vintage
The year 2023 stands out for its generous, warm and stable climatic conditions. After a cool spring lasting until mid-May and budburst in mid-April, flowering took place under optimal conditions in early June. The summer proved particularly hot, ranking this vintage among the warmest on record, before the harvest was carried out under the best conditions in early September.
Winemaking and Aging
The making of the Corton Grand Cru "Clos des Cortons Faiveley" Monopole 2023 begins with complete destemming of the bunches. Vinification takes place in new wooden vats or conical stainless steel tanks, with active management of the cap through punching down and pumping over. Transfers are carried out by gravity to preserve the quality of the juices. Aging is then carried out in a balanced proportion comprising 50% new oak barrels and 50% once-used barrels.
