Tasting
Colour
The colour reveals a deep ruby red hue, enhanced by dark and luminous highlights.
Nose
Intense and remarkably complex, the nose opens with aromas of fresh red fruits such as raspberry, morello cherry and cherry, harmoniously blended with floral touches of rose and violet. With aeration, subtle notes of spice, cherry stone and a fine minerality emerge, allowing the fruit to express itself with purity.
Palate
The attack, remarkably delicate, precedes a dense and complex palate. The structure rests on fine, silky tannins, offering a perfect balance between the generosity of the fruit and a lovely freshness. A saline, chalky minerality stretches the wine through to a long, clean and persistent finish.
Food and Wine Pairing
This red wine pairs wonderfully with roasted white meats such as veal or lamb, as well as with light game such as pigeon or duck confit. It will also enhance dishes in mushroom or truffle sauces, and will ideally accompany matured cheeses such as goat's cheese, Comté or blue-veined cheeses.
Service and Storage
For optimal tasting, it is advisable to serve the Volnay 1er Cru "Les Caillerets" 2022 at a temperature between 15 and 16°C, taking care to let it breathe gradually. This wine, built for aging, can be cellared under optimal conditions and will be ideal to drink until around 2035.

The Elegance and Minerality of a Great Volnay Wine
The Estate
Officially founded in 1885 and strategically based in Meursault, France, Domaine Henri Boillot is an unmissable reference in Burgundy. A pioneer of ultra-sustainable farming as early as the 1990s, the estate carries on a philosophy of absolute respect for the terroir and non-interventionism. Today, the family legacy continues brilliantly: Henri Boillot oversees the production of the white wines, while his son Guillaume Boillot has directed the vinification of the reds since 2012. The estate stands out for its constant pursuit of excellence and its mastery of Burgundian climats.
The Vineyard
Located to the south of the Volnay appellation, on the border with Meursault, the Les Caillerets climat enjoys an ideal south-east exposure, at an altitude ranging between 230 and 280 metres. This singular terroir stands out for its great pedological heterogeneity: the upper section is very stony and rests on a filtering oolitic limestone, while the lower section is more clay-based. The vines, 59 years old in 2022, are cultivated without chemical herbicides, with regular ploughing and strictly limited yields to encourage optimal grape concentration.
The Vintage
The year 2022 stood out for its exceptional weather conditions in Burgundy. This particularly favourable climate encouraged optimal ripeness and great homogeneity among the grapes. The harvest, carried out late, made it possible to gather concentrated fruit while preserving a remarkable natural balance and lovely freshness.
Winemaking and Aging
Manual harvesting precedes a vinification blending whole and destemmed grapes. A cold maceration of 6 to 8 days is carried out, followed by fermentation with indigenous yeasts punctuated by measured punching down and pumping over. The Volnay 1er Cru "Les Caillerets" 2022 is aged gently for 12 to 16 months in French oak barrels, with a proportion of 25% new barrels, 50% once-used barrels and 25% twice-used barrels, following the integral vinification technique.
