Tasting
Colour
The colour reveals a pale golden-yellow hue, enhanced by deeper golden highlights.
Nose
The bouquet opens with a complex minerality evoking gunflint and crushed rock, mingled with pure aromas of white fruits such as pear and peach, along with white flowers. With aeration, subtle notes of citrus, beeswax and brioche emerge.
Palate
Full-bodied and enveloping, the palate offers a generous texture underpinned by a vibrant freshness. The lively acidity highlights a beautiful mineral salinity, leading to a remarkably long finish, marked by a persistent tension and a delicate touch of ginger.
Food and wine pairing
Ideal as an aperitif, this white wine pairs wonderfully with firm-fleshed fish, shellfish such as scallops or lobster, as well as oysters. It also elegantly accompanies quail served with a white wine sauce, or seafood pasta dishes such as spaghetti alle vongole.
Service and cellaring
For optimal tasting, it is recommended to serve this Saint-Aubin 1er Cru "En Remilly" 2022 at a temperature between 12 and 14°C, after a brief decanting period of 15 to 30 minutes. This wine can be enjoyed from 2026 and will continue to evolve until around 2046.

The estate
Founded in 1973 by Hubert Lamy, Domaine Hubert Lamy is part of a long family line of winegrowers established in Burgundy since 1640. Today, the estate is run by Olivier Lamy and his wife Karine, who have made the domaine one of the key benchmarks in the region. Spanning 18.5 hectares, the vineyard stands out for its intellectual and innovative approach to viticulture. Olivier Lamy notably experiments with very high-density plantings, fostering a pure and authentic expression of the terroir through environmentally friendly practices and minimal-intervention winemaking.
The vineyard
Located in the Côte de Beaune, the Saint-Aubin vineyard rises to between 300 and 450 metres in altitude on steep slopes. The "En Remilly" climat enjoys a beautiful sunny exposure and borders the prestigious terroirs of Puligny-Montrachet. The vines thrive on shallow, stony soils composed of limestone with a very low proportion of clay. These demanding conditions push the root system to draw nutrients from deep within the soil, giving the grapes a profound mineral concentration and remarkable freshness.
The vintage
The year 2022 was marked by climatic challenges that tested the winegrowers' expertise. Despite these demanding weather conditions, the growing cycle produced berries of optimal purity and ripeness, reflecting the resilience of the terroir and the meticulous attention given to the vines throughout the season.
Winemaking and ageing
The making of this Saint-Aubin 1er Cru "En Remilly" 2022 is based on a philosophy of minimal intervention. As soon as they arrive at the winery, the grapes are gently pressed without prior crushing. The must then ferments using indigenous yeasts, at low temperature over an extended period, in 300- and 600-litre barrels. Ageing continues for a total of 16 months, including 12 to 13 months in oak barrels (with around 20% new wood), before concluding with six months' rest in tank on fine lees to preserve the wine's full tension.
