Colour
A beautiful deep ruby red, this wine reveals garnet highlights alongside a remarkable crystalline brightness.

Nose
Rich and highly complex, the bouquet exudes aromas of red and black fruits such as cherry, plum and blackberry. Aeration releases subtle floral touches of violet, mineral notes of graphite, as well as spicy, earthy and exotic wood nuances.

Palate
Structured and muscular, the palate offers an abundance of black fruit balanced by a refreshing acidity. The tannins are fine and powdery, lending a robust, concentrated texture. The finish, long and full of elegance, reveals delicate mineral notes, along with mocha, tobacco and sandalwood.

Food and wine pairing

Ideal with full-flavoured meats, this wine beautifully complements roast lamb, grilled duck breast or feathered game. It also pairs wonderfully with wild mushroom dishes, truffle risottos, as well as aged cheeses such as an old Comté or a Beaufort.

Service and storage

To fully enjoy its aromatic range, it is recommended to serve this wine at a temperature between 16 and 18°C. With excellent ageing potential, it can be cellared until around 2035.

The estate

Founded in 1999 with a single leased hectare, Domaine Sylvain Pataille has become an essential reference in Burgundy. Now at the helm of the estate, Sylvain Pataille, a passionate oenologist, cultivates a vineyard certified organic and farmed according to biodynamic principles. A staunch advocate of his appellation, the winemaker distinguishes himself through a low-intervention approach and tireless work, aiming to reveal the purest expression of his terroirs and elevate his wines to the top of the regional hierarchy.

The vineyard

Located in the commune of Marsannay, the Le Chapitre climat is an exceptional historic terroir. Facing east, the old vines thrive on a slope with highly draining soil. This soil is composed of light sandy limestone and layered scree, resting on a limestone bedrock. The estate applies a very high planting density to encourage the complexity of the grapes.

The vintage

The year 2023 was marked by a hot and particularly dry summer season. Fortunately, abundant rainfall in June helped prevent water stress in the vines. These fortunate climatic conditions ensured perfect health at harvest, yielding modest quantities but berries of remarkable aromatic and phenolic concentration.

Winemaking and ageing

The grapes are hand-harvested and undergo extremely rigorous sorting. Fermentation begins spontaneously thanks to indigenous yeasts, with a large proportion of whole clusters retained. Pressing is carried out very slowly using an old manual vertical press. The wine is then aged in French oak barrels. Bottling takes place without fining or intensive filtration.
