Description
The balance and aromatic finesse of a white Auxey-Duresses Village
The estate
Domaine Taupenot-Merme was founded in 1963 through the union of Denise Merme and Jean Taupenot, the 7th generation of two Burgundian families whose winemaking history dates back to the 18th century. Based in Morey Saint Denis, the estate has become a benchmark among the great Burgundy wines, thanks to the development of both its terroir and its winemaking methods.
The vineyard
Farmed organically since 2001, the Domaine Taupenot-Merme vineyard covers 13 hectares. Its old vines average 35 years of age and reach 60 years in some plots. They are spread across emblematic Grand Cru and Premier Cru sites as well as village and regional appellations.
The wine
This Auxey-Duresses Village 2018 from Domaine Taupenot-Merme comes from a 0.30-hectare vineyard. Facing south/south-east at an altitude of between 260 and 360 metres, this terroir lies on limestone and marl soils. The vines are around 40 years old.
Vinification and ageing
Harvested by hand at full ripeness, the grapes are carefully transported to the winery to avoid any oxidation or uncontrolled pre-fermentation maceration. They are then rigorously sorted before destemming and fractional low-pressure pressing. The juice is chilled for 24 hours at 12°C, then settled to optimise the extraction of its aromatic potential while preserving the purity of the fruit. Alcoholic fermentation takes place in stainless steel tanks at low temperature, followed by transfer to French oak barrels (25% new). Carried out with indigenous yeasts, the alcoholic fermentation lasts several weeks or even several months. The wine is aged for 10 months on the lees without racking. Malolactic fermentation. Bottled with light filtration.
Blend
The Auxey-Duresses Village 2018 from Domaine Taupenot-Merme is 100% Chardonnay.
