Tasting
Colour
The wine displays a deep, dark ruby-red colour with garnet highlights that reflect its fine concentration.
Nose
Complex and evolving, the nose releases aromas of ripe black fruit (blueberry, blackberry, black cherry) mingled with notes of undergrowth and sweet spices. Subtle hints of citrus, reminiscent of orange zest, bring lovely freshness to the whole.
Palate
The palate is seductive, with its concentrated substance and velvety texture supported by fine yet tight-knit tannins. Lively acidity balances this medium-bodied red wine, which stretches into a long, mineral and fruity finish.
Food and wine pairings
This wine pairs perfectly with roast red meats, game such as a haunch of venison with lingonberries, or flavourful poultry. It is also a wonderful match for washed-rind cheeses such as Époisses or Langres.
Serving and cellaring
For optimal enjoyment, serve this Gevrey-Chambertin Village "Ostrea" 2015 at a temperature of between 16 and 18°C, allowing it to open up naturally in the glass. This wine can be enjoyed now but will continue to develop gracefully until around 2035.
The depth and minerality of a red wine from Gevrey-Chambertin
The estate
The history of Domaine Trapet began in 1870, when Louis Trapet settled in Gevrey-Chambertin, in Burgundy (France). Passed down from generation to generation, the estate is now run by Jean-Louis Trapet, his wife Andrée, and their sons Pierre and Louis. A pioneer of biodynamics in the Côte de Nuits, the domaine has been Biodyvin certified since 1998 and Demeter certified since 2005. With 18.5 hectares of vineyards on Burgundian soil and a unique foothold in Alsace, the estate stands out for its commitment to producing authentic wines of place that respect the living world.
The vineyard
This cuvée comes from a collection of plots covering around 2.5 hectares, located around Brochon and Gevrey-Chambertin. This distinctive terroir is characterised by clay-limestone soils particularly rich in fossilised oysters, which give the wine both its name and its minerality. Farmed biodynamically without any herbicides, the vineyard is home to an exceptional plant heritage, including very old vines, some of which were planted in 1915.
The vintage
2015 was marked by a particularly hot, dry summer with generous sunshine. These favourable weather conditions allowed the berries to reach optimal ripeness, promoting great concentration and remarkable phenolic richness while preserving fine balance.
Winemaking and ageing
The grapes are harvested by hand to preserve the integrity of the berries. In the cellar, the partially destemmed grapes undergo a cold pre-fermentation maceration for gentle extraction. Fermentation takes place under strict temperature control. The Gevrey-Chambertin Village "Ostrea" 2015 is then aged in oak barrels for 15 to 18 months. Finally, the wine is bottled without filtration.
