The colour is clear and pure, revealing a pale gold hue enhanced by subtle green highlights.

The nose exudes fresh floral and fruity aromas, delicately enhanced by spicy notes of coriander.

Palate
Ample and generous, the palate reveals a supple, silky texture. It unfolds flavours of yellow fruit intertwined with floral touches, underpinned by a subtle mineral salinity. The structure evokes an inverted triangle, opening with a broad attack before stretching into a finish of great precision and finesse.

Food and Wine Pairing

This white wine pairs wonderfully with seafood and shellfish such as langoustine, prawns or lobster. It also enhances oysters, whose iodized flavours resonate with the wine's minerality, or bolder dishes such as grilled swordfish.

The Floral Elegance and Richness of a Great White Chablis

The Estate

Founded in 1880 in Beaune, Maison Joseph Drouhin is a historic figure of Burgundy. In the 1960s, the family played an active role in the revival of the Chablis vineyards, giving rise to Domaine Vaudon. Today, the estate is led by Frédéric Drouhin, representing the fourth generation. Farming its land biodynamically, the Drouhin Vaudon estate is committed to finding natural solutions to viticultural challenges, producing wines that faithfully express the complexity and authenticity of their terroirs.

The Vineyard

The terroir of Chablis Grand Cru Vaudésir spans 15.4 hectares, of which 1.5 hectares belong to the Drouhin family. This singular vineyard forms a natural amphitheatre within the Vaudésir valley, offering varied exposures that favour optimal ripening. The vines thrive on Kimmeridgian soils, composed of marine fossils, with a higher proportion of clay and slightly less limestone than the neighbouring plots.

The Vintage

The year 2023 stands out as one of the hottest ever recorded in Burgundy. Despite strong disease pressure and rainfall that at times exceeded seasonal norms, the exceptional heat maintained throughout the growing cycle allowed for rapid development and perfect ripening of the berries by the time of harvest.

Winemaking and Aging

Following a harvest combining manual and mechanical picking, the grapes for the Chablis Grand Cru "Vaudésir" 2023 are gently pressed using a pneumatic press. The final press juices are rigorously discarded. After a settling period, fermentation takes place in stainless steel tanks. The wine is then aged for seven to ten months in these same stainless steel tanks, during which time malolactic fermentation takes place, thereby preserving the full purity of the fruit.
