Tasting Notes
Appearance
This wine reveals a white colour.
Nose
The aromatic bouquet opens with notes of fresh citrus, blending lime zest and white grapefruit with delicate touches of white flowers. A strong mineral imprint then emerges, evoking scents of wet stone and oyster shell.
Palate
The attack is particularly lively and dynamic. The palate offers a texture that is both concentrated and delicate, supported by vibrant acidity and a powerful saline tension. The tasting unfolds into a persistent, linear and deeply chalky finish.
Food and Wine Pairings
Thanks to its purity and iodized character, this wine pairs wonderfully with seafood or raw fish, such as sashimi. It also perfectly accompanies a matured goat cheese.
Serving and Cellaring
For optimal tasting, it is recommended to serve La Côte 2024 at a temperature of between 10 and 12°C. While this wine can be enjoyed young for its freshness, it has the structure needed to age favourably until around 2029.
The Mineral Expression of a Great Sancerre Terroir
The Estate
The history of the Boulay family in Chavignol dates back to the 14th century, with the earliest evidence of winemaking traced to 1310 or 1380. Today, Gérard Boulay runs this family estate of around ten hectares located in the Loire Valley. Considered one of the elite winemakers of his appellation, he favours organic farming. The estate is renowned for its minimal-intervention approach, producing wines of great purity that precisely reflect the identity of their historic terroirs.
The Vineyard
Made under the Sancerre appellation, this cuvée comes from a small plot located on the famous site of La Grande Côte, in Chavignol. The terroir consists of very shallow clay-limestone white soils and caillottes, resting on a bedrock of Kimmeridgian marl. The old vines, grown organically, are meticulously worked by hand to ensure optimal grape quality and preserve the balance of the soil.
Winemaking and Ageing
The winemaking of La Côte 2024 is as natural as possible, with fermentation triggered exclusively by indigenous yeasts. The wine is then aged in old foudres and vats, with no new oak used at all, allowing the minerality of the terroir to express itself with complete transparency.

This Sancerre white wine is 100% Sauvignon Blanc.
