Tasting Notes
Appearance
The colour reveals a pale yellow hue with green tints, showing beautiful brilliance and great clarity.
Nose
The nose opens with aromas of ripe citrus fruits, such as candied lemon and grapefruit, mingled with notes of orchard fruit. Subtle touches of white flowers and fine herbs intertwine with a deep mineral imprint reminiscent of wet stone and flint.
Palate
The attack is lively and crystalline, revealing a razor-sharp acidity that is perfectly integrated. The mid-palate offers fleshy, generous fruit, underpinned by an intense, rocky minerality. The finish lingers with savoury, slightly saline notes.
Food and Wine Pairing
This white wine from France pairs wonderfully with a seafood platter, oysters or a fish ceviche. It also goes very well with roast poultry served with green vegetables, light Asian dishes such as sushi, and goat's cheeses, particularly Crottin de Chavignol.
Serving and Cellaring
For optimal tasting, it is recommended to serve the Tradition Blanc 2025 at a temperature between 10 and 12°C. Decanting briefly for 15 to 30 minutes helps to release its full complexity. This wine can be cellared to evolve until around 2030.
The Mineral, Authentic Expression of a Great Sancerre White Wine
The Estate
Although the family's winemaking history dates back to the 14th century, the estate's modern structure was established in 1972. Located in Chavignol, at the heart of the Sancerre appellation in the Loire Valley, this family-run estate is now managed by Gérard Boulay, with the support of his son Thibaut. The estate stands out for its deep commitment to respecting the terroir, practising uncertified organic viticulture since 1990. Meticulous soil work and the absence of chemical products allow the pure, crystalline identity of their wines to shine through.
The Vineyard
The grapes come from several plots located on the steep hillsides of the village of Chavignol, an emblematic terroir of Sancerre. The vines, aged between 35 and 45 years, benefit from a prime exposure and are rooted in complex soils combining Kimmeridgian marl, also known as terres blanches, and stony limestone. Planting density is high, encouraging healthy competition between the vines. The vineyard is cultivated without pesticides, with controlled grass cover and regular ploughing to stimulate biological life in the soils.
The Vintage
2025 stood out as an early vintage in the Loire region. Mild, sunny weather conditions favoured a rapid growing cycle, allowing the grapes to reach optimal ripeness while maintaining excellent health, resulting in a harvest of exceptional quality.
Winemaking and Ageing
The grapes are hand-harvested in small crates to preserve the integrity of the berries. After gentle pressing and static clarification, the juice for the Tradition Blanc 2025 ferments naturally thanks to indigenous yeasts. Ageing then takes place on fine lees for eight to nine months, mostly in stainless steel tanks, while a small proportion is aged in a large wooden foudre, adding texture without marking this Sancerre white wine.
