Tasting
Nose
The bouquet proves particularly enticing, with a lovely intensity. It releases seductive notes of yellow fruits and brioche, subtly enhanced by hints of citrus and delicate floral nuances.
Palate
Showing beautiful density, the palate offers a remarkable balance between roundness and freshness. The fruity substance is generous, supported by a perfectly mastered acidity that brings great dynamism to the whole. The finish stands out for its persistence and pleasing length.
Food and wine pairings
This white wine pairs wonderfully with roasted white fish, such as cod, or scallops prepared in a cream sauce or breaded. It also brilliantly accompanies a roasted loin of veal or aged hard cheeses, such as an eighteen-month Comté. It can equally be enjoyed on its own as an aperitif.
Serving and cellaring
This Saint-Véran Village 2023 is designed to be enjoyed in its youth thanks to its fruity profile, but its lovely structure allows it to evolve favourably and be savoured until around 2028.
The authentic expression of a great Saint-Véran by Domaine J.-A. Ferret in Burgundy
The estate
Founded in 1840 in the heart of the Mâconnais in Burgundy, Domaine J.-A. Ferret is a true benchmark. Historically led by visionary women, this estate has distinguished itself through its pioneering approach to single-plot expression. The vineyard now extends over 18.5 hectares. Acquired in 2008, the estate is currently owned by Maison Louis Jadot, while retaining its independence. Under the direction of Clément Robinet since 2023, this prestigious name has obtained organic certification, confirming its commitment to an exceptional terroir.
The vineyard
This Saint-Véran cuvée comes from a small 35-are plot located in the commune of Davayé, within the lieu-dit Les Plantés. Owned by the estate for several decades, these vines were planted in 1991. They thrive on a limestone outcrop dating from the Upper Jurassic (Argovian), composed of white-beige limestones with a few marl intercalations. The harvest is carried out entirely by hand to guarantee optimal quality.
The vintage
The 2023 vintage stands out for its particularly warm weather conditions in Burgundy, even surpassing the temperatures of the previous year. This summer heat allowed the grapes to reach optimal physiological and sugar maturity at harvest, offering a perfect balance between sugar concentration and the preservation of natural acidity.
Winemaking and aging
The making of the Saint-Véran Village 2023 follows rigorous methods, similar to those used for the estate's great Pouilly-Fuissé wines. Both fermentation and aging take place in barrels on the lees. Light bâtonnage is carried out at the end of fermentation and at the beginning of the aging period to enhance aromatic complexity. The bottling of this vintage is scheduled for February 2025.
