The 2023 Chablis Vaudésir Grand Cru has a more backward nose that, at the moment, is surpassed by a couple of Droin's excelling Premier Crus like Montée de Tonnerre. Light apple blossom and lemon rind. The palate is well balanced with fine depth and a crisp line of acidity. It gently builds toward a spicier finish. Very fine, but not the best Grand Cru from the Domaine this year.

Exhibiting notes of sweet white peach, spring flowers, hazelnuts and pastry cream, Droin's 2023 Chablis Grand Cru Vaudésir is medium to full-bodied, satiny and suave, with a quintessentially elegant, textural profile. It's even more expressive and aromatic than the 2022, despite its more recent bottling.

Colour
This white wine from France reveals a pale yellow hue illuminated by brilliant silvery reflections, offering a perfectly crystalline clarity.

Nose
The bouquet opens on an assertive minerality, harmoniously complemented by scents of white flowers and white-fleshed fruits. With aeration, delicious hints of toasted almond and hazelnut delicately emerge.

Palate
The palate opens with a fine sweetness, evolving into a silky, pure and refreshing mouthfeel. The acidity, of great nobility, supports a mouth-watering mineral tension without any harshness. The finish, warm and persistent, extends over nuances of flint and chalk, enhanced by a subtle iodine and saline touch.

Food and wine pairing

This cuvée pairs wonderfully with refined dishes such as raw fish carpaccio, delicate seafood like scallops, or noble fish served with a creamy sauce. It also pairs very well with white meats, poultry and fresh or matured goat cheeses.

Service and storage

To fully appreciate this Chablis Grand Cru "Vaudésir" 2023, it is recommended to serve it at a temperature between 12°C and 13°C. This wine can be enjoyed now, but it possesses remarkable aging potential and will continue to improve, drinking well until around 2033.

The estate

Officially founded in 1620, the Domaine Jean-Paul & Benoît Droin represents more than four centuries of family heritage at the heart of Burgundy, France. Today, Benoît Droin embodies the thirteenth generation of winemakers at the helm of this emblematic estate. The vineyard spans 26 hectares across the finest terroirs of the region. The house's philosophy rests on a subtle balance between respect for historical traditions and viticultural innovation, with a fierce determination to preserve the freshness and mineral authenticity that have made its wines renowned.

The vineyard

This wine comes from the prestigious terroir of the Grand Cru Vaudésir, located within the Chablis appellation. The vines, averaging around forty years old, thrive on shallow, light-coloured soils resting on a subsoil of Kimmeridgian limestone marl. The plot benefits from a pronounced slope offering a south-west exposure, ideal conditions for ensuring slow, optimal ripening of the grapes while preserving great freshness.

Winemaking and aging

The making of the Chablis Grand Cru "Vaudésir" 2023 begins with slow pneumatic pressing, followed by enzymatic settling at a controlled temperature. Fermentation is triggered by indigenous yeasts, split equally between stainless steel tanks and barrels. Aging continues for eight to ten months, with 50% of the wine in tank and 50% in barrel, incorporating only 20% new barrels so as not to mask the identity of the terroir. A complete malolactic fermentation is carried out before light filtration and bottling.
