Tasting
Appearance
This wine reveals a bright, vivid and clear red colour, attesting to a beautiful youthfulness while already displaying a wonderfully harmonious structure.
Nose
The aromatic intensity proves remarkably complex. The bouquet exhales scents of black fruits such as wild blackberry, blackcurrant and blueberry, delicately interwoven with floral touches reminiscent of violet and peony, along with subtle spicy notes.
Palate
Ample and full-bodied, this wine offers a tender, fluid and wonderfully rounded texture. The balance is perfect between lovely freshness and very silky tannins. The finish, particularly flavoursome and persistent, leaves impressions of blackberry jam. With time, aromas of undergrowth, truffle and sometimes game may also emerge.
Food and wine pairings
This cuvée pairs wonderfully with traditional Burgundian recipes, such as herb-roasted poultry, fine charcuterie or soft cheeses. Its vivacity and the lightness of its tannins also allow it to accompany moderately spiced Asian dishes, such as stir-fried beef with ginger.
Serving and ageing
It is recommended to serve this Chorey-les-Beaune Village 2022 at a temperature of 16°C. Designed to be enjoyed at its best between 5 and 8 years, it has an ageing potential that will allow it to evolve in the cellar until around 2032.
A rich and balanced Chorey-les-Beaune
The estate
Founded in 1880 by Joseph Drouhin, the eponymous House is a true institution located in Beaune, in Burgundy. Today led by Frédéric Drouhin, representing the fourth generation, the family estate watches over a vast vineyard of 110 hectares. Renowned for its high standards and respect for terroir, this iconic name obtained its organic certification in 2023. The estate stands out for its sustainable practices and its commitment to producing wines that reflect the purity and minerality of their appellations.
The vineyard
The vines dedicated to this Chorey-les-Beaune flourish to the north of Beaune, not far from the famous hill of Corton, along the route of the ancient Roman road Agrippa. This flat terroir of alluvial origin is composed of clay-limestone soils rich in silt and marked by ancient ferrous deposits. The estate applies rigorous organic viticulture, excluding any use of synthetic pesticides or herbicides, in order to preserve biodiversity and the authentic expression of the soil.
The vintage
The 2022 year was marked by particularly hot summer weather conditions. Despite these high temperatures, the growing cycle produced grapes offering a remarkable balance between beautiful concentration and great freshness.
Winemaking and ageing
To craft this Chorey-les-Beaune Village 2022, the grapes come from family parcels as well as partner winegrowers. Harvests are carried out by hand in slatted crates, followed by rigorous sorting and complete destemming. After a three-day cold pre-fermentation maceration at 8°C, fermentation begins thanks to indigenous yeasts in small open stainless steel vats thermostatically controlled at 30°C, lasting two to three weeks. Daily punching down and pumping over accompany this stage. After passing through a vertical press, the wine is aged in French oak barrels from sustainably managed forests, of which 20% are new, for a period ranging from 12 to 16 months.
