Characteristics and Tasting Tips for the Chablis Grand Cru "Les Preuses" 2021 from La Chablisienne
Tasting
Color
The color displays a slightly golden hue, clear and bright.
Nose
The nose expresses itself with finesse, blending aromas of tangy fruits such as apricot and passion fruit with delicate floral notes, notably acacia. On aeration, these floral accents gain in intensity, enriched by a gourmand touch of fresh brioche.
Palate
The texture is silky and elegant. The balance between richness and freshness gives the wine a refined personality. The finish, both spicy and warm, stretches out on notes of ripe fruit, revealing excellent aging potential.
Food and Wine Pairings
This wine is a perfect match for foie gras toasts, caramelized salmon, or a selection of soft cheeses such as Brillat-Savarin or Brie, accented by dried fruits like apricots, figs, or hazelnuts.

The Estate
Founded in 1923 thanks to the actions of Abbé Balitrand, the cooperative cellar La Chablisienne is the largest producer of Chablis wines. From Petit Chablis to Chablis, through Chablis Premiers Crus and Chablis Grands Crus, not to mention the cuvées of the legendary Château Grenouille, La Chablisienne produces around thirty different cuvées and crus, allowing enthusiasts of great Burgundy wines to discover the multiple personalities of Chablis wines.
The Vineyard
The cuvée "Les Preuses" from La Chablisienne is a Chablis wine Grand Cru from vineyards located on the right bank of the Serein. South-west facing, the vines, averaging 30 years old, are planted on Kimmeridgian clay-limestone soils.
Winemaking and Aging
Static cold settling. Alcoholic and malolactic fermentations are carried out in barrels and tanks. This Chablis Grand Cru is aged for 20 months on fine lees, in both tanks and barrels.
Grape Variety
Chardonnay (100%).
