Tasting

Appearance
The wine reveals a pale, luminous hue, enhanced by delicate green highlights that reflect its remarkable youth.

Nose
The aromatic bouquet proves particularly complex. It exudes fragrances of pink grapefruit and blackcurrant leaf, harmoniously interwoven with notes of mineral smoke reminiscent of flint.

Palate
At once ample, generous and remarkably precise, the palate is carried by a lively yet perfectly integrated acidity. It reveals a persistent saline thread and a striking minerality, offering a superb balance between density and freshness, before extending into a finish of exceptional length.

Food and wine pairings
This cuvée will pair beautifully with fine seafood such as grilled lobster or a scallop carpaccio with citrus. It will also enhance delicate fish such as poached turbot with beurre blanc, a tuna tataki with fresh herbs, or white meats in sauce, such as Bresse poultry served with a morel cream sauce.

Serving and cellaring
To fully appreciate the Indigène 2025 cuvée, it is recommended to serve it at a temperature of 12°C. Endowed with excellent ageing potential, this wine can be kept in the cellar and enjoyed until around 2045.

A Pouilly-Fumé of crystalline precision by Pascal Jolivet

The estate
Founded in 1987, the Pascal Jolivet House is a benchmark of the Loire Valley. The estate stretches across 65 hectares located notably in Pouilly-sur-Loire, Saint-Andelain and Tracy-sur-Loire. Today, Pascal Jolivet remains the owner and active winegrower at the helm of the estate, joined by his son since 2020. The estate stands out for its environmentally respectful approach, herbicide-free since 2010, and a winemaking style focused on the authenticity of the terroirs. A new gravity-flow winery was also completed in 2024 to preserve the purity of the juices.

The vineyard
This wine from the Pouilly-Fumé appellation comes from old vines located in the commune of Tracy-sur-Loire. The plots benefit from an ideal exposure on west-facing slopes, directly overlooking the river. They thrive on distinctive soils composed of flinty sands, fostering a strong mineral identity. The yield for this cuvée is rigorously controlled at 45 hectolitres per hectare.

The vintage
The year began with a few climatic challenges, notably a frost episode in April that slightly impacted harvest volumes, followed by early spring storms. However, the growing cycle continued ideally thanks to a particularly sunny summer, providing perfect conditions to reach optimal berry ripeness.

Winemaking and ageing
For the Indigène 2025 cuvée, the grapes are harvested by hand and followed by a rigorous double sorting of the bunches and berries. The process continues with whole-bunch pressing and a light cold settling. Fermentation takes place entirely naturally thanks to indigenous yeasts, in stainless steel tanks temperature-controlled at 14°C. The wine then benefits from ageing on fine lees for 9 months, with no fining or filtration before bottling.
