Tasting
Nose
With immediate aromatic purity, the bouquet reveals itself as particularly floral and vibrant. It exhales intense scents of citrus such as lemon, lime and grapefruit, mingled with notes of white fruits like peach and pear. Subtle herbaceous touches of boxwood and fresh grass blend with a very distinct chalky minerality.
Palate
At once lively, deep and complex, this wine unfolds an elegant and finely chiselled structure. The acidity, though pronounced, integrates perfectly into a generous, fruity mid-palate. A chalky mineral backbone brings precision, leading to a persistent, mouth-watering finish that recalls citrus and wet stone.
Food and wine pairings
This cuvée is the ideal companion to seafood, such as raw or cooked shellfish, oysters, as well as tartares and carpaccios of white fish or salmon. It also pairs wonderfully with goat cheeses such as Crottin de Chavignol, vegetable dishes based on asparagus or herb salads, and even richer fare such as poultry with cream and morels or fine crustaceans.
Serving and cellaring
To fully appreciate this 2025 vintage, it is recommended to serve it at a temperature of 10°C. Endowed with excellent potential, this wine can be enjoyed until around 2035.
The pure expression of the Sancerre terroir by Pascal Jolivet
The estate
Founded in 1987, the Pascal Jolivet House quickly established itself as an essential reference in the Loire Valley. Today led by its eponymous founder, Pascal Jolivet, the estate farms 120 hectares spread between Sancerre and Pouilly-Fumé, along with 60 hectares in Touraine. A recognised specialist of Sauvignon Blanc, the domaine stands out for its rigorous plot-by-plot approach and its philosophy of natural winemaking. Combining respect for the environment with technical precision, the House produces wines of great aromatic purity, faithful to their terroirs of origin.
The vineyard
The result of a careful plot selection within the estate, this emblematic cuvée comes from the village of Bué, at the heart of the Sancerre appellation. The vines, exposed on south-facing slopes and cultivated under organic farming, thrive on shallow, hard and very stony soils. These 100% limestone lands, dating back to the Kimmeridgian, are locally known as "Les Caillottes". To preserve the quality of the berries, the harvest is carried out by hand and followed by meticulous sorting upon arrival of the crop.
Winemaking and aging
The crafting of this wine relies on gravity-fed work in order to respect the natural cycle of vinification. After a gentle pressing, only the free-run juice and the heart of the press are retained. Vinification takes place exclusively naturally, thanks to the action of indigenous yeasts, in temperature-controlled stainless steel tanks. Finally, the wine benefits from 8 months of aging on fine lees in these same tanks, thereby preserving the fruit and minerality without any influence from oak.
