Tasting
Colour

The palate offers a perfect balance between roundness and acidity. The rich texture combines with lovely tension, stretching into a persistent finish that highlights the wine's mineral and citrus identity.
Food and wine pairing
This white wine pairs wonderfully with delicate seafood such as oysters, scallops or shellfish like langoustine and lobster. It also pairs beautifully with white meats, such as roasted or poached poultry served with a light broth, as well as refined vegetable-based dishes.
Service and storage
For optimal tasting, this wine should be served at a temperature between 8 and 12°C, without prior decanting in order to preserve its aromas. Very appealing in its youth, it possesses a fine structure that allows it to develop in the cellar, with an ideal drinking window through to around 2028.
The elegance and mineral tension of an atypical white wine from the Côte de Beaune
The estate
Founded in 1945 by Raymond Javillier with just two hectares, Domaine Patrick Javillier is a benchmark name in Burgundy. Located in Meursault, the estate now spans 11 hectares of vines. Taken over in 1974 by Patrick Javillier, the domaine distinguished itself through its scientific approach, precision and extended lees aging. Today, the third generation, represented by Marion Javillier and her husband Pierre-Emmanuel Lamy, along with Catherine and Laurène, runs the estate. They passionately carry on this demanding philosophy, producing wines renowned for their balance and the pure expression of their terroir.
The vineyard
This wine comes from a small 0.70-hectare plot named "Les Montchenevoy", located on the upper slopes of the Savigny-Les-Beaune appellation. Perched at over 350 metres of altitude on a west-facing slope surrounded by forests, this atypical terroir for white wines benefits from a cool microclimate that favours slow berry ripening. The vines thrive on complex soils composed of marl resting on a limestone substrate, giving the wine its unique mineral signature. The estate favours meticulous viticulture with controlled yields and entirely hand-harvested grapes.
The vintage
2022 stands out as an excellent vintage. After adequate rainfall at the start of the growing season, summer brought warm, dry conditions ideal for ripening. These favourable weather conditions allowed for early harvesting, beginning in late August, and yielded exceptionally well-balanced grapes.
Winemaking and aging
The making of this wine follows a philosophy of minimal intervention. After gentle pneumatic pressing that preserves fine lees and settling, the musts ferment thanks to indigenous yeasts in wooden barrels. The wine then undergoes extended aging on its fine lees for 12 to 16 months, accompanied by regular stirring (bâtonnage). For this cuvée, the use of new barrels is minimal, if not entirely absent, in order to preserve all the purity and freshness of the fruit.
