Tasting

Colour
The colour reveals a brilliant white hue with luminous highlights.

Nose
The aromatic bouquet opens with scents of Japanese grapefruit, subtly complemented by nuances of fern, humus and delicate mineral and earthy touches.

Palate
Fresh and silky, the palate offers a superb balance between richness and finesse. It reveals flavours of warm lemon and ripe, juicy white fruits, supported by a lovely mineral backbone.

Food and wine pairing

This white wine pairs beautifully with buttery fish dishes such as sole meunière, roast chicken, or creamy sauce-based dishes such as shrimp blanquette or mackerel with mustard. It also enhances preparations served with hollandaise or béarnaise sauce.

Service and storage

For optimal tasting, it is recommended to serve the Chassagne-Montrachet Village 2023 at a temperature of between 10 and 12°C, in a classic glass allowing gentle aeration. This wine can be enjoyed now and will continue to develop favourably until around 2032.

The elegance and minerality of a white wine from Chassagne-Montrachet

The estate

Founded in 1877 in the heart of Beaune, in Burgundy, the house of Remoissenet Père et Fils is a true historic institution. Famous for its fourteenth-century medieval cellars housing precious bottles, the estate underwent a major revival when it was acquired in 2005 by American collector Edward L. Milstein. Today, under the oenological direction of Claudie Jobard, the estate cultivates a minimal-intervention philosophy and is moving towards biodynamics. This producer-négociant of excellence is dedicated to revealing the purest expression of Burgundian terroirs through limited-production cuvées.

The vineyard

The grapes come from two specific plots located on the northern edge of the Chassagne-Montrachet appellation, on the Côte de Beaune. This unique terroir benefits from intermediate soils, blending the clay depth typical of the Santenay side with the stony lightness of Puligny. Resting on a bedrock of Jurassic limestone, these sustainably cultivated vines draw from this complex soil the material needed to offer profound minerality and perfect balance.

The vintage

The year 2023 stands out as the hottest ever recorded, with temperatures consistently above seasonal averages. The growing cycle was marked by a notable water deficit and strong pressure from fungal diseases. Despite these climatic challenges and considerable variation in ripeness levels across the plots, the harvest proved generous in volume, allowing for a rigorous selection of the berries.

Winemaking and aging

The grapes are harvested by hand to select the best bunches. Fermentation of the Chassagne-Montrachet Village 2023 is triggered by indigenous yeasts, sometimes in open wooden vats. The wine then undergoes malolactic fermentation and ages in oak barrels, including a proportion of new wood, which gives it its complexity and structure before bottling.
