Tasting

Appearance
The wine displays a deep ruby red color.

Nose
Generous and inviting, the nose reveals fruity and sweet aromas of red cherries and ripe plums. Floral notes of fresh roses and hibiscus intertwine with delicate hints of fully ripe Roma tomato.

Palate
The palate is rich while maintaining remarkable balance, both fresh and flavorful. The elegant structure reflects a meticulous study of contrasts and harmony. The very long finish expresses ripe tannins with a lingering softness.

Food and wine pairings
This Barolo Aleste Sibi et Paucis 2015 pairs beautifully with braised red meats, game birds, dishes featuring Alba white truffles, as well as aged cheeses from Piedmont.

Serving and cellaring
This Barolo Aleste Sibi et Paucis 2015 can be enjoyed until around 2045. Decanting one to two hours before serving will reveal its full aromatic complexity.

The estate
Founded in 1978 when Luciano Sandrone vinified his first vintage in the family garage, this Piedmont estate now embodies Barolo excellence. Established in Barolo with vineyards on the prestigious crus of Cannubi Boschis and Roero, it produces around 8,000 cases annually. Since Luciano’s passing in 2023, his daughter Barbara Sandrone and his son Luca have carried on his legacy. The estate stands out for its uncertified organic approach, low yields, and winemaking that balances tradition and modernity: spontaneous fermentations, aging in 500-liter casks with minimal new oak, creating elegant, age-worthy Barolos.

The vineyard
This Barolo comes from the southeastern part of the Cannubi hill, historically known as Cannubi Boschis, located in the commune of Barolo. The vines thrive on a southeast-facing slope with moderately compact marl soils. This parcel lies at the very heart of the Cannubi hill, one of the most prestigious terroirs of the appellation.

The vintage
The 2015 vintage in Piedmont was marked by seven weeks of intense heat from late June to August 14. Storms then ushered in a long, cool twelve-week ripening period. These conditions resulted in generous aromas and flavors, supported by a fine structure, well-ripened tannins, and strong aging potential. Harvest took place from October 6 to October 17, 2015.

Winemaking and aging
Spontaneous fermentation occurs with indigenous yeasts in open-top steel tanks. Malolactic fermentation takes place in 500-liter French casks, which are also used for aging. This Aleste Sibi et Paucis 2015 cuvée benefited from an additional six years of aging in Luciano’s personal cellar after its initial release date in September 2019. The bottles bear a special seal identifying this particular library-aging program under optimal conditions.
