Tasting

Nose

The nose opens with finely spiced notes before evolving toward floral and exotic aromas. Chamomile comes through alongside hints of mango and lychee, creating a delicate and surprising aromatic palette.

Palate

The attack reveals citrus fruits paired with spices, where lemon thyme, verbena and ginger intertwine. The resinous character of juniper brings structure, while a bitter depth lends energy to the finish.

Food pairings and tasting occasions

This organic gin is best enjoyed at a temperature between 4 and 8°C to fully reveal its aromas.

M. Chapoutier: a Rhône Valley house pioneering biodynamics

Founded in 1808 and truly established as a wine house in 1879 by Polydor Chapoutier, M. Chapoutier has been based in Tain-l'Hermitage in the Rhône Valley for generations. Under the leadership of Michel Chapoutier since 1990, the current owner alongside his family, the House established itself as a pioneer of biodynamics as early as 1991, cultivating 240 hectares across the most prestigious Rhône appellations (hermitage, côte-rôtie, châteauneuf-du-pape).

Sothis: an organic gin with botanicals from Ardèche

Sothis is an organic gin made from organic grape alcohol and nine botanicals: common juniper, cade, chamomile, savory, elderflower, wild thyme, verbena and mint. The production process begins with a 12-hour infusion of the first batch of plants in the grape alcohol, followed by a distillation of more than 4 hours using a sequential infusion and blending method.

Pestrin spring water, sourced from the Ardèche volcanic region in an old medieval town, was ranked among the best waters in the world at the international Gourmet AVPA-Paris competition. This exceptional water contributes to the remarkable quality of Sothis. Batch 04 comprises 4,065 numbered bottles, attesting to the artisanal and limited nature of this Ecocert-certified production.
