Founded in 1947 by Joseph Nusbaumer in Steige in the Alsatian Vosges, the Nusbaumer distillery has upheld exceptional artisanal know-how for more than 75 years. This independent company, labeled Entreprise du Patrimoine Vivant, excels in distilling fruit eaux-de-vie and botanical spirits. It showcases local fruits and wild plants thanks to the pure water from the Climont’s schist springs.
The traditional crafting of Nusbaumer Vieille Prune
This Vieille Prune is crafted using a rigorous traditional method from wild plums. The process begins with fermenting the plums for several weeks. After pitting, the fruit purée rests for another 4 to 6 weeks to fully develop the fruit’s aromas before distillation. The eau-de-vie is then brought down to proof by adding pure water from Vosges springs, then aged in oak barrels for one year. This maturation imparts its characteristic amber hue and the roundness so appreciated by enthusiasts. This meticulous production method makes this Vieille Prune a classic among Alsace eaux-de-vie and a flagship of the distillery’s “Exceptional Eaux-de-vie” range.
