Tasting
Colour
The colour reveals a pale yellow hue with subtle green highlights.
Nose
The bouquet opens with aromas of white flowers, citrus fruit and light spicy touches, marked by a chalky note. On aeration, it reveals scents of grapefruit, white peach, orange zest and herbaceous nuances.
Palate
The attack is lively and fresh, highlighting a lovely minerality and saline notes. The texture is delicate, supported by precise acidity and light toasty touches, leading to a lingering citrus finish.
Food and Wine Pairing
This white wine pairs perfectly with shellfish such as lobster or scallops, as well as with delicate fish like turbot or sole. It also complements poultry and veal dishes in cream sauce, or mature cheeses such as Comté and Saint-Nectaire.
Service and Cellaring
For optimal tasting, it is recommended to serve the Savigny-Les-Beaune Village "Clos du Village" 2022 at a temperature of between 11 and 13°C. This wine can be enjoyed in its youth but will continue to evolve favourably until around 2029.
The Mineral Elegance of a Savigny-les-Beaune White Wine
The Estate
Founded in 2001, the Thibault Liger-Belair estate continues a family winemaking heritage in Burgundy dating back to 1720. Now run by Thibault Bocquillon Liger-Belair, the estate tends a vineyard of around 8 hectares located mainly in the Côte de Nuits. The estate stands out for its soil-friendly approach, certified organic since 2005, and a philosophy centred on the phenological ripeness of the grapes. Through its négoce activity established in 2003, the producer also crafts wines from partner plots, while maintaining rigorous quality standards.
The Vineyard
The cuvée comes from an enclosed plot of around 0.2 hectares located in the western part of the Savigny-Les-Beaune appellation, within the lieu-dit Le Village. South-facing, the vines flourish on soils made up of white marl and clay, rich in limestone. This terroir benefits from a specific microclimate thanks to cool winds descending from the Hautes-Côtes de Beaune, allowing balanced ripening of the berries while preserving their freshness.
The Vintage
2022 was marked by particularly hot and moderately dry weather conditions in France. Despite these high temperatures, the influence of cool winds and the limestone nature of the soils enabled the vines to withstand the heat, producing grapes that were both ripe and endowed with lovely freshness.
Winemaking and Ageing
The grapes for the Savigny-Les-Beaune Village "Clos du Village" 2022 are harvested by hand, with transport in small perforated crates to preserve the fruit. In the cellar, the whole bunches undergo a slow three-hour pressing. Fermentation starts spontaneously with indigenous yeasts, followed by a natural malolactic conversion. Ageing then takes place over 15 months, exclusively in used oak barrels, so as not to mask the wine's mineral expression.
