Characteristics and tasting notes of the Salmos 2021 by Torres
Tasting notes
Appearance
This wine reveals a beautiful deep, dark cherry colour.
Nose
The aromatic bouquet is rich, dominated by luscious scents of strawberry jam, raspberry and small red fruits. It is enhanced by notes of Mediterranean undergrowth and dried fruits.
Palate
Warm and velvety on the palate, this wine offers tannins of great finesse. The tasting ends on a subtly bitter finish, uplifted by spicy touches, liquorice, roasted coffee and chocolate.
Food and wine pairings
This cuvée pairs wonderfully with characterful meats, roasted or in sauce, such as lamb, venison, wild boar or hare. It also goes very well with grilled vegetables as well as aged sheep's milk cheeses, like Manchego.
Serving and cellaring
To fully appreciate this wine, it is recommended to serve it at a temperature between 16 and 18 ºC. Stored in good conditions, it can be enjoyed until around 2031.
A warm and velvety Priorat wine crafted by Torres
The estate
Founded in 1870 in Vilafranca del Penedès in Catalonia, the Familia Torres bodega is a true winemaking institution. Now led by Miguel Torres Maczassek, representing the fifth generation, the estate has established itself as an essential global brand. A pioneer of sustainable and regenerative viticulture, the domain extends across numerous Spanish and international appellations. While preserving a centuries-old family heritage, the house constantly innovates to face climate challenges, producing terroir-driven wines renowned for their outstanding quality and unique identity.
The vineyard
The grapes come from steep vines located in the municipality of Porrera, in the heart of the Priorat appellation. This singular terroir is characterised by shallow llicorella soils, a carboniferous slate that offers rapid drainage and low water retention. The wide temperature swings between day and night in this mountainous area help forge the unique character of the grapes.
The vintage
The 2021 vintage was marked by a drier-than-average climate, with irregular rainfall. However, significant snowfall at the beginning of the year replenished the soils' water reserves. Summer rains then encouraged the proper development of the bunches. While temperatures remained overall normal, a mild February prompted an early bud break, later slowed by a cooler spring. A few rain showers in September slightly delayed the start of the harvest.
Winemaking and ageing
Skin maceration lasts between 10 and 11 days. Alcoholic fermentation takes place in stainless steel tanks under controlled temperatures (24 to 25 ºC) for about a week. Malolactic fermentation is then carried out in French oak barrels. Ageing extends over 14 months: 70% of the wine matures in French oak barrels (20% of which are new) and the remaining 30% in 30-hl French oak casks. Bottling took place in October 2023.
Grape varieties
This cuvée is made from a blend of Garnacha and Cariñena.
