Color
The wine displays a deep garnet hue.
Nose
The bouquet opens with aromas of black fruit, with notes of blackcurrant and blackberry, complemented by nuances of plum and cherry. Merlot brings touches of ripe stone fruit and licorice, while Cabernet Sauvignon enriches the whole with hints of violet and blackcurrant. Cabernet Franc introduces spicy notes of pepper and subtle herbs. With aeration, cedar and tertiary notes emerge, reflecting aging in French oak barrels.
Palate
On the palate, this wine reveals a rounded tannic structure and a medium body, with balanced freshness that enhances the fruit expression. The tannins offer fine presence without harshness, allowing excellent compatibility with food. The finish is pleasantly long, with mineral and earthy nuances.
Food and wine pairings
Végan by Château Pierbone 2017 pairs perfectly with grilled or roasted red meats, notably ribeye steak or beef tenderloin. It also elegantly accompanies roasted lamb, game such as wild boar or venison, as well as roasted poultry. Mushroom-based preparations—whether porcini or sauced dishes—create remarkable harmonies. The estate
Château Pierbone is the Second Wine of Château Peyrabon. Located in the Haut-Médoc appellation, at the gateway to Pauillac, the Château Peyrabon estate is nestled in a true green haven. Owned by Patrick Bernard since 1998, Château Peyrabon has undergone major restructuring and modernization, both in the vineyard and in the cellar. The vineyard
Végan by Château Pierbone 2017 comes from selected plots located in the commune of Saint-Sauveur-en-Médoc, within the Haut-Médoc appellation. The vineyard is planted on sandy gravel soils with a clay-limestone subsoil, providing ideal conditions for the expression of Bordeaux grape varieties. The average age of the vines was twenty-seven years at the time of the 2017 vintage.
The vintage
The 2017 vintage benefited from favorable conditions for producing structured wines. Flowering took place between May 22 and May 30, followed by veraison from July 23 to August 5. These phenological stages enabled balanced ripening of the grapes. Hand harvesting took place from September 14 to September 29, with Merlot picked between September 14 and September 20, and Cabernet Sauvignon between September 21 and September 29, ensuring optimal ripeness for each grape variety.
Winemaking and aging
After hand harvesting, the grapes were transported in vibrating bins and then mechanically destemmed. Optical sorting removed lower-quality berries. Vinification took place in temperature-controlled concrete and stainless-steel vats, with fermentation temperatures maintained around 25-26°C. Maceration lasted between 19 and 24 days depending on the plots. After vertical pressing, the wine was aged for fourteen months in French oak barrels, mainly second- and third-fill. Fining was carried out with a plant-based agent (Végécol at 4 g/hL), giving the wine its vegan certification.
