    A Burgundy Premier Cru Combining Crystalline Freshness and Aromatic Depth

    The Estate

    Since its founding in 1959, the Domaine William Fèvre embodies the excellence and authenticity of Chablis wines. A true reference in the world of great Burgundy white wines, the domaine joined the Henriot group in 1998, further consolidating its international prestige.

    Heading up a remarkable 78-hectare vineyard, including 15.9 hectares in Premier Cru and 15.2 hectares in Grand Cru, William Fèvre highlights the diversity of Chablis terroirs through a mosaic of over 90 parcels. Certified High Environmental Value (HVE) since 2015, the domaine is fully committed to respectful viticulture, showcasing the pure and unique expression of each climat.

    The Vineyard

    Originating from a highly sought-after lieu-dit, the “Montée de Tonnerre” cuvée comes from a 2.24-hectare parcel ideally exposed to the southeast, south, and west. This Premier Cru borders the Grands Crus and benefits from exceptional geological and climatic conditions. The shallow, lightly stony soil is composed mainly of white stones, imparting finesse, tension, and salinity to this Chablis wine.

    The Vintage

    The 2023 vintage experienced a contrasting climate with a mild winter, harmless frosts, and a summer alternating between heat and rain. Despite strong sanitary pressure in June, well managed by the teams, the September harvest yielded generous volumes and grapes in excellent condition.

    Vinification and Aging

    This Chablis 1er Cru is crafted using a gentle approach, with gravity vinification without pumping and brief pneumatic pressing. After light settling, fermentations occur naturally in stainless steel vats, followed by 19 months of aging, including 5 to 6 months on lees in French oak barrels for 35% of the cuvée. The final stage of aging takes place in stainless steel tanks.
