Tasting

Colour
White in colour, this wine from France reveals a pale to medium yellow hue, enhanced by delicate green glints typical of its terroir.

Nose
Wonderfully complex, the aromatic bouquet opens with a fine mineral intensity intertwined with citrus and floral notes. It exudes aromas of pear, green apple, lime and citrus zest, enriched by touches of oyster shell, almond, beeswax and white flowers.

Palate
Full-bodied and structured, the palate offers a remarkable balance between a generous texture and an austere minerality. The succulent fruity core is carried by a fine tension and a saline freshness. The long, vibrant finish stands out for its striking precision and vibrant acidity.

Food and Wine Pairing

This great white wine pairs wonderfully with seafood, shellfish and white meats. It will beautifully complement oysters, roasted prawns, lobster, scallops or poultry served with a light cream sauce. It also pairs very well with seasonal vegetables such as asparagus, as well as mature goat cheeses.

Service and Storage

To fully appreciate this Chablis Grand Cru "Valmur" 2023 from Domaine William Fèvre, it is recommended to serve it at a temperature of between 12 and 14°C. While it already offers great pleasure in its youth, this wine, built for aging, will be able to develop in the cellar until around 2070.

The Pure and Mineral Expression of a Great Chablis Wine

The Estate

Founded in 1959, William Fèvre is a true institution located in Chablis, in Burgundy. Starting with just seven hectares, the estate now spans more than 70 hectares, including the largest area of Grands Crus in the appellation. Technically directed by Didier Séguier since 1998, the estate has distinguished itself through its pioneering approach to sustainable viticulture and environmental respect. Since January 2024, the estate has belonged to Domaines Barons de Rothschild, who continue to uphold the excellence and unique identity of these great white wines from France.

The Vineyard

This wine comes from the Valmur climat, one of the seven Grands Crus of the Chablis appellation. This amphitheatre-shaped terroir enjoys varied exposures, with the estate's plots mainly oriented towards the south and southeast. The vines draw their unique character from the famous Kimmeridgian soils, composed of marl, limestone and oyster shell fossils. This exceptional geological terroir gives the grapes an incomparable minerality and salinity. The harvest is carried out exclusively by hand to preserve the quality of the fruit.

The Vintage

2023 began with early flowering in June, favouring an abundant harvest. The summer period, from June to August, was marked by relatively cool temperatures and scattered rainfall. However, a heatwave in September considerably accelerated the berries' ripening cycle, leading to a particularly early harvest at the end of August.

Winemaking and Aging

The making of this Chablis Grand Cru "Valmur" 2023 from Domaine William Fèvre is based on a philosophy of minimal intervention. After a gentle static settling that preserves the fine lees, fermentation begins naturally through indigenous yeasts. Aging takes place partly in French oak barrels aged five to six years, as well as in temperature-controlled stainless steel tanks, in order to preserve the mineral purity and transparency of the terroir.
