Tasting
Appearance
With a very pale pink, flesh-toned hue, the color reflects the delicacy of the extraction and Provençal expertise.
Nose
The nose reveals delicate notes of ripe fruit, notably apricot and fig, evolving toward hints of dried fruit with aeration. Aromas of Mediterranean citrus, particularly mandarin, complete this elegant bouquet.
Palate
The palate is well balanced and rounded, with a finish marked by mandarin. A সুন্দর saline length, signature of the Baie des Canoubiers terroir, brings freshness and complexity to the whole.
Food and wine pairings
This rosé pairs perfectly with modern, Mediterranean garden cuisine. It goes beautifully with grilled vegetables, fresh fish, seafood, fresh goat cheeses, or lightly spiced dishes. Also excellent as an aperitif with Mediterranean tapas, pissaladière, or a salade niçoise. It is equally suited to convivial barbecues and picnics.
Serving and cellaring
This La Rouillère 2025 is best enjoyed at a temperature between 50 and 54°F (10–12°C). This wine can be enjoyed until around 2026, favoring the expression of its freshness and fruity aromas.
An elegant and saline Provence rosé from Domaine La Rouillère
The estate
Founded in 1900, the Domaine La Rouillère covers 230 hectares in the heart of the Saint-Tropez peninsula, between Gassin and Ramatuelle, including 47 hectares of vineyards. Acquired in 1998 by Magali and Bertrand Letartre, the estate has undergone a true renaissance. Now managed by Bertrand Letartre, it stands out for its ultra-modern 1,700 m² winery equipped with 54 stainless steel tanks, its environmental commitment with HVE certification, and its approach combining tradition and innovation.
The vineyard
This Côtes de Provence rosé comes from vineyards located in the Saint-Tropez region, around the famous Baie des Canoubiers. The 47 hectares of vines are divided into 147 plots benefiting from an exceptional terroir and Mediterranean maritime influences. Limestone and clay soils, combined with a climate tempered by proximity to the sea, give the wines their characteristic mineral and saline character. The estate practices sustainable viticulture, notably using horses for certain tasks and harvesting exclusively at night.
The vintage
The 2025 vintage benefits from the favorable Mediterranean climatic conditions of the Provence region, allowing optimal ripening of the grapes under the Provençal sun.
Winemaking and aging
As soon as they arrive at the winery, the grapes for La Rouillère 2025 are immediately cooled using a tubular heat exchanger to preserve their freshness. Gentle pneumatic pressing with selection of the first juices is then carried out. Fermentation takes place in temperature-controlled stainless steel tanks at low temperature (60–63°F / 16–17°C) to preserve delicate aromas. The wine is then aged on fine lees until bottling, adding roundness and complexity.
