The estate
Created in 1955 as one of the eighteen Crus Classés of Provence, the Château Saint-Maur is located in Cogolin, at the heart of the Gulf of Saint-Tropez. Acquired in 2011 by Roger Zannier, a passionate entrepreneur, the estate has undergone a remarkable transformation under the leadership of Marc Monrose and technical director Patrick Galliano, appointed in 2015. Spanning approximately 80 hectares of vineyards divided into three parcels, the estate has been committed since 2021 to a conversion to organic farming. Château Saint-Maur now embodies the excellence of contemporary Provençal viticulture, combining respect for the terroir with innovative techniques.
The vineyard
The Château Saint-Maur vineyard benefits from a privileged geographical location within the Côtes de Provence appellation, protected by the Maures massif which shelters it from the mistral while allowing it to benefit from Mediterranean sea breezes. The soils are composed of clay-limestone enriched with schist and quartz, giving the wines their distinctive mineral character. The estate cultivates traditional Provençal grape varieties, notably rolle for the whites. Harvesting is carried out exclusively at night to preserve the freshness and aromatic integrity of the grapes. The estate also implements massal selection to preserve the vineyard’s genetic diversity and quality.
The vintage
The 2025 vintage in Provence benefited from favorable climatic conditions, allowing optimal ripening of the white grapes, with an ideal balance between maturity and aromatic freshness.
Winemaking and aging
The "L'Excellence" 2025 blanc cuvée is vinified using low-temperature protocols combined with cold maceration, preserving the delicate aromas of rolle. Aging takes place with 25% in neutral oak barrels and 75% in stainless steel tanks, bringing complexity and structure while maintaining the purity of the fruit and varietal expression.
