A rich, balanced red from Côtes de Provence
The estate
Founded in 1806 by Philémon Gavoty in Cabasse in the Var, Domaine Gavoty embodies more than two centuries of exceptional family winemaking in Provence. Now led by Roselyne Gavoty, the eighth generation at the helm of this historic estate, the property spans fifty hectares of organically certified vineyards. The estate stands out for its early commitment to organic practices and a production philosophy that emphasizes texture and the pure expression of terroir.
The vineyard
This Côtes de Provence wine comes from vines in Cabasse, in the northwestern part of the appellation, around fifty kilometers north of Saint-Tropez. The vineyard is rooted in an outstanding Triassic plateau terroir, an ancient geological formation made up of layers rich in clay and limestone. Rocky, difficult-to-farm plots require manual vineyard work, perpetuating traditional practices. The vines benefit from the natural protection of magnificent oak and pine forest massifs that stabilize the local climate and create optimal growing conditions.
The vintage
The year 2020 falls within a singular period for Provençal viticulture. This vintage showcases the estate’s capabilities after thirty-five years under Roselyne Gavoty’s stewardship, during which she transformed production according to rigorous organic farming principles and a minimally interventionist approach to winemaking.
Winemaking and aging
The Cuvée Clarendon 2020 from Domaine Gavoty was vinified and aged in old cement and steel vats, in keeping with the estate’s philosophy established since 1985. This technical approach favors freshness and the pure expression of terroir by avoiding oaky aromatics that could mask the wine’s authenticity. Minimal cellar interventions allow the Triassic terroir to express itself in all its purity.
