Food and wine pairings
This white wine pairs ideally with seafood and shellfish, such as oysters or langoustines served with a tarragon beurre blanc. It also enhances a traditional bouillabaisse, grilled fish, a citrus sea bass ceviche, or a creamy white truffle risotto and herb-roasted poultry with Provençal herbs.

The maritime elegance of a white wine from Côtes de Provence
The estate
Founded in 1896 by Marcel Ott, the Domaines Ott* embody winemaking excellence in Provence. This historic estate stands out for its iconic amphora-shaped bottle, created in the 1930s, as well as its pioneering commitment to environmental stewardship. Today, the estate spans nearly 300 hectares across three distinct vineyards. Since 2004, Champagne House Louis Roederer has been the majority shareholder, while operational management remains in the hands of Jean-François Ott, representing the fourth generation of the founding family.
The vineyard
Located in La Londe-les-Maures, within the Côtes de Provence appellation, the Clos Mireille vineyard extends over gently sloping plots down to the Mediterranean Sea. This unique terroir is characterized by ancient soils composed of schist, quartz, and clay, entirely free of limestone. The microclimate, strongly influenced by sea spray and coastal breezes, provides ideal conditions for growing white grape varieties.
The vintage
The year began with a mild and rainy spring, offering less extreme conditions than in previous years. This period was followed by a hot, dry summer tempered by cool nights. These weather conditions allowed for slow and steady ripening of the grapes, ensuring a fine balance between acidity and aromatic expression.
Winemaking and ageing
The grapes are harvested by hand, followed by rigorous sorting to retain only the finest berries. Extremely gentle pneumatic pressing extracts high-quality juice while preserving the freshness of the fruit. Fermentations proceed slowly. The ageing of this Clos Mireille "Blanc de Blancs" 2024 then takes place in large wooden foudres, accompanied by regular bâtonnage.
Grape varieties
This wine is a blend of sémillon and rolle.
