Tasting notes
Nose
The bouquet opens on delicate aromas of white flowers such as lily and rose, accompanied by white fruits like peach and apple. With aeration, notes of candied lemon emerge, underpinned by a mineral thread evoking chalk, iodine and subtle smoky hints of flint.
Palate
Ample and elegant, the palate offers a round, almost creamy texture, carried by an airy freshness. It unfolds flavours of orchard fruits and citrus, balanced by a fine acidic tension. The lingering, slightly chalky finish stretches out on saline and iodine notes.
Food and wine pairings
This white wine pairs ideally with fine fish gently prepared, such as sea bass with citrus or poached turbot, as well as with shellfish like lobster or spiny lobster. It also goes very well with white meats and poultry served with a light cream and mushroom sauce, or with lightly aged soft cheeses such as Chaource.
Serving and cellaring
For an optimal tasting experience, it is recommended to serve this Chablis Grand Cru "Les Blanchots" Dom. Long-Depaquit 2022 at a temperature between 12 and 14 °C. A light decanting of one to two hours before serving is advised in its youth. This wine can be enjoyed now, but its structure allows it to evolve favourably in the cellar until around 2035.
The floral elegance and mineral purity of a Chablis wine
The estate
Founded in 1831 in Monthélie and later established in Beaune, the Albert Bichot House is a historic name in Burgundy. Independent and family-owned for six generations, it is now chaired by Albéric Bichot, alongside Guillaume Deglise as General Manager. The estate oversees a vineyard of more than 100 hectares spread across six domains, including Château Long-Depaquit. A pioneer in environmental practices, the House stands out for its sustainable viticulture, its conversion to organic farming and its long-standing commitment to the Hospices de Beaune.
The vineyard
Located at the heart of the Chablis appellation, Domaine Long-Depaquit extends over 52.1 hectares farmed organically and certified High Environmental Value Level 3 as well as Terra Vitis. The cuvée comes from a 4.07-hectare parcel within the Les Blanchots climat, on a steep east-facing slope. The vines, around 45 years old, thrive on shallow soils of Kimmeridgian clay-limestone marls, rich in oyster fossils and dotted with blue clay, favouring gentle morning sunshine.
The vintage
The 2022 vintage was marked by warm yet particularly well-balanced weather conditions. This climate allowed the berries to reach full and generous ripeness while preserving the natural freshness and vivacity essential to a smooth vegetative cycle.
Winemaking and aging
Crafted with a low-intervention approach, this Chablis Grand Cru "Les Blanchots" Dom. Long-Depaquit 2022 undergoes manual harvesting followed by gentle pressing. Fermentation and aging on fine lees take place over ten months, with 70% in stainless steel tanks and 30% in oak barrels aged three to five years. The wine then rests for a further six months in stainless steel tanks before bottling.
