Tasting
Nose
The bouquet is elegant and complex, revealing delicate notes of citrus and white flowers that gradually evolve into deeper aromas of dried fruits and rare spices.
Palate
Ample and rich, this wine offers a beautiful aromatic intensity supported by a balanced structure. The oak, subtly integrated, accompanies a persistent and aromatic finish that testifies to the quality of this Premier Cru.
Food and wine pairings
This Chassagne-Montrachet pairs perfectly with noble fish and finely cooked shellfish. It also elegantly accompanies poultry and white meats, particularly when they are served with a creamy sauce. A supreme of poultry with mushrooms constitutes a particularly successful pairing with this wine.
Service and aging
Serve between 12 and 14°C. Although it can be tasted now to appreciate its fruity freshness, it can evolve favorably until around 2027.

A Premier Cru from Burgundy of remarkable elegance
The property
Founded in 1831 by Bernard Bichot, the Albert Bichot house is a pillar of Burgundy viticulture, with family roots dating back to 1350. Under the direction of Albéric Bichot since 1996, the house has distinguished itself by its commitment to organic farming and sustainable management of its six estates spread throughout Burgundy, including the Long-Depaquit estate in Chablis and the Rochegrès estate in Beaujolais. Each estate, with its dedicated team, allows a precise expression of the Burgundy climates.
The vineyard
The Chassagne-Montrachet "Vide Bourse" is made from a vineyard located south of the Côte de Beaune, in an enclosed plot immediately adjacent to the prestigious Bâtard-Montrachet. This exceptional terroir, bordering the old "chemin de Couches" road, is characterized by very draining clay-limestone soils scattered with numerous small pebbles, giving the wine its distinctive minerality and aromatic complexity.
Vinification and aging
Harvested by hand, the grapes are carefully sorted. After a slow and moderate pressure pressing, alcoholic fermentation and aging take place on fine lees in oak barrels, 30 to 35% of which are new, for a period of 14 to 16 months, giving the wine its structure and complexity.
