Tasting

Appearance

The wine reveals a deep ruby hue, enhanced by delicate violet highlights characteristic of this red wine's youth.

Nose

The aromatic bouquet opens with notes of dark stone fruits, such as black cherry and blackcurrant. It is then enriched with subtle spicy hints reminiscent of black pepper, delicate herbs and elegant mineral nuances.

Palate

On the palate, this wine seduces with its delicate texture and tannins of great finesse. The fruity expression unfolds with aromas of raspberry and red cherry, perfectly balanced by an underlying minerality and very discreet oak notes.

Food and wine pairings

This red wine pairs wonderfully with poultry in cream sauce, coq au vin with mushrooms, or grilled fish served with a light butter sauce. It will also enhance aged cheeses such as Comté or Beaufort, as well as subtly spiced Asian dishes or fresh oysters.

Serving and cellaring

For optimal tasting, it is recommended to serve this Chassagne-Montrachet Village "Concis des Champs" 2023 at a temperature between 12 and 14°C, after decanting it for thirty minutes to one hour. This wine can be enjoyed now, but it will continue to develop its complexity in the cellar until around 2033.

The estate

The history of the Picard family in Burgundy began in 1951, but it was in the late 2000s that Francine Picard, representing the fourth generation and current owner, created the Au Pied du Mont Chauve brand. This name pays tribute to the famous Montrachet hill. The estate today cultivates around 35 hectares on the most prestigious terroirs of the Côte de Beaune. Deeply committed to respecting the environment, the property stands out for its rigorous biodynamic approach, aiming to produce wines that express the authenticity of their terroirs.

The vineyard

The terroir of this Chassagne-Montrachet Village "Concis des Champs" features a brown, silty and clay soil, free of limestone. It has excellent water retention capacity, thus avoiding hydric stress. The soil is deep, with an abundance of roots and organic matter between 0 and 30 cm. From 30 to 100 cm, it contains cherts and iron nodules that support the plant during periods of excess water.

The vintage

The year 2023 was marked by demanding weather conditions, with intense summer heat and irregular rainfall. Despite this complex growing cycle, the natural precocity of the plot enabled optimal maturity to be reached, leading to a harvest carried out in the very last days of August.

Vinification and ageing

The making of the Chassagne-Montrachet Village "Concis des Champs" 2023 follows a philosophy of minimal intervention. After complete destemming, fermentation takes place in temperature-controlled open vats, favouring a long infusion-style maceration to extract colour and tannins with great gentleness. Ageing then continues for about fifteen months, with 15% in new barrels, 50% in 350L barrels and 50% in Burgundy barrels.
