Colour

The aromatic bouquet opens with intense notes of red and black berries such as cherry, redcurrant, blackcurrant and raspberry, evoking stewed fruit. The whole is underscored by touches of liquorice and a subtle hint of mocha.

Palate
The palate stands out for its elegance and beautiful freshness. Its structure rests on silky tannins, harmonising with cocoa-tinged aromas, stretching towards a remarkably long finish.

The estate
Founded in 1731 by Michel Bouchard, the house of Bouchard Père & Fils is a historic institution of Burgundy, located in France. The estate truly took off as a wine producer from 1775, settling in 1820 at the renowned Château de Beaune, whose underground galleries house its cellars. Today owned by the Artémis Domaines group (Pinault family), with a stake held by the Henriot-Larouzière family, the estate is led by Emmanuel Dumont. With a vineyard spanning 65 hectares, this iconic producer stands out for its environmental commitment, crowned by an organic farming certification.

The vineyard
The "Les Avaux" climat is located in the northern part of the Beaune appellation, benefiting from a gentle slope and an ideal south-east exposure for grape ripening. This terroir rests on well-drained clay-limestone soils, enriched with iron elements, and benefits from an underground spring that maintains a level of moisture favourable to the vine's development.

The vintage
The year 2022 offered mild weather conditions, with a spring spared from frost and strong sunshine promoting early vine development. Despite a summer marked by heat and water stress towards the end of the season, hand-harvesting, which began in early September, allowed for the grapes to be picked in impeccable health, with beautiful ripeness.

Winemaking and aging
The making of this Beaune 1er cru "Les Avaux" Domaine 2022 begins with 100% destemming and gentle crushing, followed by gravity-fed tank filling. Maceration lasts twenty-one days, including a cold phase, with fermentation using indigenous yeasts and regular punching down. The wine is then aged on the lees for eighteen months in French oak barrels (33% new) that have undergone a very long, low-temperature toasting. Bottling is carried out by gravity after light filtration.
