Tasting
Appearance
The wine reveals a pale yellow colour with golden highlights, at times hinting at subtle onion-skin tints. It is remarkably clear and beautifully bright.
Nose
The bouquet displays a finely nuanced complexity. It releases floral scents of jasmine, lily and lemon blossom, closely intertwined with citrus notes such as lime and orange zest. A chalky minerality comes to the fore, complemented by light touches of fresh yellow fruit and ripe red berries.
Palate
The attack is vibrant and elegant, revealing a vertical structure and a chalky texture. Flavours of white fruit, brioche and toasted almonds blend harmoniously with a clean, invigorating acidity. The finish is remarkably long and intensely saline.
Food and wine pairing
This wine is a superb match for delicate fish, oysters and aged hard cheeses, as well as rich, creamy dishes such as a gratinéed seafood parmentier.
Serving and cellaring
This "Hardy" Blanc de Noirs Extra Brut 2019 is best served between 8°C and 10°C, allowing it a few minutes to open up in the glass. Blessed with excellent potential, it can be cellared for several years.

The estate
Founded in 1970 by Serge and Alain Bonnet, the house is located in Les Riceys, a singular terroir in Champagne with Burgundian influences. The vineyard covers 47 hectares. Part of the Lanson-BCC group since 1998, the brand is now led by Arnaud Fabre, President, and Thomas Remy, Managing Director. Domaine Alexandre Bonnet stands out for its plot-by-plot approach, its partial conversion to organic farming and its regenerative practices, which showcase the unique identity of its Kimmeridgian soils.
The vineyard
This Blanc de Noirs Extra Brut comes from a north-facing plot at an altitude of 320 metres. The vines, around 30 years old, thrive on shallow soils of limestone and fossil-rich Kimmeridgian marl. The plant material comes from massal and clonal selections, trained using Guyot and Cordon de Royat pruning.
The vintage
2019 brought favourable weather conditions to this cool, sunny, semi-continental area. This climate allowed for slow ripening, resulting in ripe grapes that nonetheless retained a fine balance and fresh acidity.
Winemaking and ageing
The "Hardy" Blanc de Noirs Extra Brut 2019 is vinified and aged exclusively in stainless steel tanks to preserve the purity and freshness of the fruit. The wine then undergoes extended ageing on the lees for around 44 months before disgorgement.
