Winemaking and aging
The winemaking of Femme de Champagne Grand cru Brut 2008 is carried out separately according to the origin of the grapes, thus preserving the identity of each terroir. A portion (6%) is vinified in 220-liter oak barrels, adding complexity and structure. Malolactic fermentation is carried out, followed by natural clarification without animal or plant fining agents. Having benefited from 17 years of aging, including 15 years on fine lees, this champagne thus reveals exceptional complexity, richness, and finesse.
