Tasting
Color
With a beautiful white hue showing delicate pale gold and straw highlights, this champagne is enhanced by an exceptionally fine and remarkably persistent effervescence.
Nose
The aromatic bouquet opens with notes of stone fruit such as peach, apricot and pear, harmoniously blended with touches of white flowers and citrus. A herbaceous dimension and a pronounced minerality, reminiscent of chalk, crushed rock and sea salt, come to enhance the whole as it opens up with aeration.
Palate
With great precision, the palate offers a lively and vibrant attack. This wine seduces with its very dry structure, supported by a refreshing acidity and a delicate texture. The saline, chalky minerality perceived on the nose carries through into a finish of remarkable length and absolute precision.
Food and wine pairing
Thanks to its tension and salinity, this wine pairs wonderfully with oysters or briny seafood. It will also shine alongside white fish prepared with an herb or citrus sauce, sole meunière, seafood terrines, as well as fresh goat cheeses.
Service and storage
To fully appreciate the complexity of this Blanc de Noirs Extra Brut, it is recommended to serve it between 8 and 10°C in classic white wine glasses rather than flutes, allowing it to breathe for 30 to 60 minutes. With fine ageing potential, this wine gains in depth and mineral expression after a few years in the cellar.
The pure, mineral expression of a great champagne from the Côte des Bars
The estate
Founded in 2005 by Dominique Moreau, the Marie-Courtin estate is located in Polisot, in the Côte des Bars, in the southern part of the Champagne region. Named in tribute to the founder's grandmother, this estate quickly rose to cult status. Still run today by Dominique Moreau, supported by her husband Roland Piollot, the house stands out for its artisanal and natural philosophy. The estate favors single-plot, single-variety cuvées grown biodynamically, resulting in wines of rare authenticity.
The vineyard
This cuvée comes from a single 0.8-hectare plot located on the upper slopes of the estate, benefiting from a south and east exposure. The vines, aged between 40 and 50 years and grown from massale selection, are deeply rooted in the clay-limestone soils of the Kimmeridgian, typical of this part of Champagne. The vineyard is farmed according to biodynamic principles, with particular attention paid to soil life and the use of preparations to promote the plant's natural balance.
Winemaking and aging
The grapes are harvested by hand to preserve the integrity of the berries. The "Résonance" Blanc de Noirs Extra Brut is made from direct pressing, followed by alcoholic fermentation in stainless steel tanks, triggered exclusively by indigenous yeasts and without temperature control. The second fermentation is also carried out using natural yeasts. The wine is then aged on lees, on lattes, for at least 24 months before being disgorged with no dosage at all, revealing the purest expression of its terroir.
