Tasting
Appearance
Pale gold hue, enhanced by delicate green highlights.
Nose
The bouquet is generous and highly complex, releasing aromas of acacia honey and candied citrus, interwoven with notes of praline and toasted hazelnut.
Palate
The palate offers superb tension carried by extremely fine bubbles. The whole is distinguished by a perfect balance between great freshness and well-structured acidity, extending into a long finish with lemony accents.
Food and wine pairings
This cuvée pairs wonderfully with seafood and the delicate flesh of shellfish, such as crab or lobster.
A pure and expressive terroir-driven champagne
The estate
Located in Rouvres-les-Vignes, the family estate was taken over by Nathalie Falmet in 1993, marking the creation of her independent winegrowing business. This oenologist now runs this confidential 3.40-hectare estate. Combining scientific rigour with artisanal sensitivity, she crafts her wines with precision thanks to her own laboratory. Favouring sustainable agriculture, she produces single-plot cuvées that express all the singularity of the Côte des Bar.
The vineyard
This cuvée comes exclusively from the micro-plot registered as ZH 318, located in the south of Champagne. Planted around fifty years ago, around 1974, these old vines flourish on clay-limestone soils dating from the Kimmeridgian. This specific terroir of the Côte des Bar is cultivated using sustainable methods, with the utmost respect for natural cycles.
Winemaking and aging
The vinification of this wine is carried out entirely in oak barrels with a capacity of 350 litres. This artisanal method imparts a singular texture and remarkable complexity to the cuvée, while preserving the pure expression of the fruit.
