The nose opens with a seductive bouquet blending white fruit aromas, such as pear and candied peach, with generous notes of fresh butter, vanilla, hazelnut and toasted bread.

Palate
Structured and full-bodied, the palate offers a rounded texture balanced by refreshing acidity. The finish proves long and remarkably refined.

Food and wine pairing

This white wine pairs beautifully with seafood, fish in sauce such as sole meunière, or white meats in cream sauce. It also complements a mushroom risotto wonderfully, as well as soft or pressed cheeses.

Service and storage

To fully enjoy this Meursault Village "Les Criots" 2023, it is recommended to serve it between 12 and 14°C, after allowing it to breathe for about thirty minutes. This wine can be enjoyed now or cellared until around 2033.

The elegance and minerality of a white Meursault wine

The estate

The history of Domaine Ballot-Millot began in 1630 with the acquisition of the first vines in Burgundy. Located in France, at the heart of the Côte de Beaune, this family estate now spans more than ten hectares. Since 2000, Charles Ballot has represented the sixteenth generation at the helm of the estate. Combining respect for tradition with modern techniques, he is guiding the vineyard toward organic farming, producing wines celebrated for their precision and faithfulness to the terroir.

The vineyard

This wine comes from the Les Criots climat, located in the commune of Meursault. This particular terroir is distinguished by its soils rich in mineral chalk, limestone and marl. The vines, averaging forty-five years of age, are cultivated sustainably, with regular tilling of the soil and a complete absence of chemical weeding to preserve microbial life.

The vintage

2023 benefited from highly favourable weather conditions. After a mild spring, the summer proved warm, punctuated by cool nights and moderate rainfall. These conditions allowed the grapes to reach optimal ripeness for an early autumn harvest.

Winemaking and aging

To craft this Meursault Village "Les Criots" 2023, whole bunches undergo a long, gentle pressing. Fermentation occurs naturally in barrels through indigenous yeasts. The wine is then aged for approximately twelve months in oak barrels (10 to 15% new oak), without stirring the lees, with rigorous control of oxygen exposure. The final blend is assembled in stainless steel tanks before light filtration and bottling timed to the lunar calendar.
