Tasting
Appearance
The wine displays a deep ruby hue with violet highlights in its youth, while retaining the lovely transparency characteristic of its grape variety.
Nose
The aromatic bouquet stands out for its remarkable complexity. It offers aromas of blueberry intertwined with floral notes of peony and pot-pourri. The whole is subtly underscored by hints of blond tobacco and cigar box, along with chalky nuances and black truffle.
Palate
On the palate, the attack reveals a texture that is at once powerful and silky. The structure rests on beautifully velvety tannins, leading to a finish of remarkable length.
Food and wine pairings
This red wine is an ideal match for flavourful dishes such as farm-raised squab tacos with avocado cream and smoked chilli. It will also elevate noble meats such as beef, veal or lamb, as well as game birds and dishes that showcase mushrooms and black truffle.
Serving and cellaring
This wine is best served at a temperature between 16 and 18°C. To release its full aromatic range, it is advisable to open the bottle ahead of time and pour off a little wine to aerate it before tasting. Built for ageing, this wine will begin to show at its best from 2030, reach its peak between 2037 and 2047, and continue to evolve in the cellar until around 2052.
The power and charm of a Burgundy grand cru from Domaine Henri Rebourseau
The estate
Located in the heart of Burgundy, Domaine Henri Rebourseau was founded in 1861 by Jean-Baptiste Rebourseau, although the family's winemaking heritage dates back to 1782. The vineyard covers some 13.5 hectares across prestigious terroirs of the Côte de Nuits. Today, the estate is majority-owned by the Bouygues family through SCDM Domaines, in close partnership with the de Surrel family. Run by Jean de Surrel, the domaine is renowned for its biodynamic viticulture and its commitment to extended ageing, which reveals the full depth of its wines.
The vineyard
Located on the Charmes-Chambertin hillside, the plot dedicated to this cuvée lies on a clay and iron-rich terroir with outcrops of limestone. The soils, enriched with humus and scattered with marl and iron-bearing stones, are home to vines averaging around 35 years of age. The entire vineyard is farmed according to the demanding principles of biodynamics, fostering an authentic and vibrant expression of the terroir.
Winemaking and ageing
The 2022 vintage was crafted through gentle extraction, with carefully managed macerations, punch-downs and pump-overs. The wine was then aged in oak barrels, with the oak precisely judged so as not to mask the fruit. The domaine stands out for its willingness to let time do its work, practising extended cellar ageing to produce wines with a harmonious, polished structure.
