Tasting notes
Appearance
The colour reveals a pale, brilliant yellow hue, with green or silvery highlights in its youth.
Nose
Delicate and remarkably pure, the nose exudes aromas of white-fleshed fruits (peach, pear, green apple) and lemon zest, dusted with white flower notes. The whole is underpinned by a mineral backbone reminiscent of chalk and wet stone.
Palate
The palate is captivating for its tension and concentration. With a slightly creamy texture, it reveals a fresh acidity carrying flavours of white and yellow fruits, such as apricot and nectarine. The long, energetic finish lingers on superb saline notes, citrus, and subtle spicy touches.
Food and wine pairing
This grand cru pairs beautifully with fine fish (turbot, sole, sea bass) served with a light butter or cream sauce, as well as with roasted shellfish such as lobster or scallops. It also pairs very well with white meats in sauce, such as poultry with morels or veal sweetbreads, as well as with hard cheeses like a young Comté.
Serving and cellaring
For optimal tasting, this wine should be served between 11 and 13°C in a tulip-shaped glass. A brief aeration in a decanter can be beneficial in its youth. This Chablis Grand Cru "Les Bouguerots" 2023 can be enjoyed now, but has the structure needed to age in the cellar until around 2029.

The estate
Founded in 1850 by Jean-Victor Laroche, Domaine Laroche is a key figure in Burgundy. While its historical roots date back to the 9th century at the heart of the famous Obédiencerie, the modern estate today oversees a vast vineyard spanning 90 hectares. Owned by the AdVini group since 2009 and led by Jean-Baptiste Mouton, the house stands out for its pioneering approach to agroecology and its demanding environmental certification. Combining a thousand-year-old heritage with precision viticulture, the estate produces wines that express the full richness and diversity of Chablis terroirs.
The vineyard
This Chablis wine comes from a tiny 31-are plot located on the Les Bouguerots climat, the westernmost of the grand cru hillside. Facing south and south-west, the vines thrive on a steep slope overlooking the Serein river. The terroir consists of soil rich in limestone, complemented by a thin layer of clay at the bottom of the slope that ensures excellent water retention. The vineyard is farmed according to strict agroecological principles, without herbicides, using massale selection and a strong commitment to preserving biodiversity.
Winemaking and ageing
The grapes are harvested by hand to carefully sort the berries. Pressing is done gently and with whole clusters to preserve the purity of the juice. After a natural settling period of around twelve hours, the fermentation and ageing of this Chablis Grand Cru "Les Bouguerots" 2023 take place in oak barrels aged between one and seven years for approximately nine months. The final blend is then refined through an additional six months of ageing on fine lees.
