The estate
An emblematic figure of Chablis, in Burgundy, the Domaine Laroche is rooted in an exceptional heritage dating back to the 9th century. Since its integration into the Advini group in 2009, the estate perpetuates a tradition of excellence, producing wines recognized for their precision, elegance and aromatic richness, faithful interpreters of the subtleties of the Chablis climates.

The vineyard
The Saint-Martin cuvée comes from a rigorous selection of plots planted on Kimmeridgian soils rich in minerals and marine fossils. This terroir gives the wine a marked minerality and an aromatic depth that perfectly reflect the identity of this white wine from Burgundy.

Vinification and aging
The grapes are hand-picked, then carefully sorted upon their arrival at the winery. The pressing is carried out at low pressure with a meticulous separation of the juices, allowing a qualitative selection of the press juices. The alcoholic fermentation and the malolactic fermentation take place in stainless steel tanks (85%) and in French oak barrels (15%), to preserve the freshness while adding complexity.
