Tasting notes
Colour
The wine reveals a beautiful, vibrant white colour.
Nose
The nose opens with lovely complexity, blending ripe citrus aromas, such as caramelised orange zest, with subtle spiced notes evoking ground coriander and cumin seeds.
Palate
The attack on the palate is broad and generous, offering beautiful succulence. This roundness is perfectly balanced by lively freshness and an acidic structure typical of its terroir. The remarkably long finish is distinguished by highly persistent saline and umami touches.
Food and wine pairing
This white wine pairs wonderfully with a seafood platter, oysters or pan-seared scallops. It will also elevate delicate white fish such as turbot, seafood pasta, or poached poultry served in a light broth.
Service and storage
This Chablis 1er Cru "Fourchaumes" 2023 shows great aging potential. While already quite approachable, it will continue to evolve and can be enjoyed until around 2035.

The estate
Founded in the 1950s in France, in the region of Burgundy, Domaine Jean Dauvissat Père et Fils now spans just over 23 hectares. Currently led by Fabien Dauvissat, the grandson of the founders, this family estate has undergone a major transformation since 2009. The winemaker introduced fresh momentum by converting the entire vineyard to organic farming, certified in 2018, and by adopting biodynamic practices. The estate stands out for its meticulous, plot-by-plot approach, aimed at expressing the purest authenticity of its terroirs.
The vineyard
Located on the right bank of the Serein, the terroir from which this wine originates enjoys a privileged south and southwest exposure. The vines thrive on deep soils of brown and reddish clay, resting on a subsoil of Kimmeridgian limestone rich in oyster fossils. This unique geology, typical of the Chablis appellation, allows for excellent drainage and gives the grapes optimal ripening while preserving great freshness. The estate favours biodiversity and works the soil using horse-drawn ploughing to protect this environment.
The vintage
The year began with a particularly mild winter, leading to an early bud break for the vines. Spring proved wet and unpredictable, requiring constant vigilance against fungal disease pressure. The end of summer was marked by dry weather, followed by a September offering ideal temperatures. These favourable conditions allowed the berries to reach excellent ripeness ahead of a harvest that began around September 10th.
Winemaking and aging
The estate's philosophy is built on highly precise, plot-by-plot winemaking. Fermentations occur naturally through indigenous yeasts. This Chablis 1er Cru "Fourchaumes" 2023 is aged mainly on fine lees. For this particular cuvée, around 25% of the volume is aged in old French oak barrels, adding subtle textural complexity without masking the wine's mineral purity.
