Description
The mineral, crystalline expression of a Chablis Village from Jean Dauvissat
The estate
Founded in 1955 by Jean Dauvissat, the estate is located in Milly, in the heart of Burgundy. Initially focused on selling grapes to merchants, it gradually developed its own bottling. Since 2009, Fabien Dauvissat, grandson of the founder, has been at the helm of the estate. He has driven a major transformation of the vineyard, obtaining organic certification in 2018 and incorporating biodynamic practices. Entirely independent from the other Dauvissat families, Domaine Jean Dauvissat is now recognised for its meticulous plot-by-plot approach.
The vineyard
The grapes for this cuvée come from the Chapelle Vaupelteigne plateau, within the Chablis appellation. The vines, facing north-west, sit on Kimmeridgian limestone bedrock rich in marine fossils. The clay-limestone soils are scattered with small stones that ensure excellent natural drainage and encourage deep rooting. The vineyard is managed according to organic and biodynamic principles, with strict control of yields and gentle soil work, at times including the use of horse ploughing.
The vintage
2023 offered favourable growing conditions in the region. The weather allowed the berries to reach an adequate and harmonious ripeness, while preserving the tension inherent to this cool climate.
Winemaking and aging
The Chablis Village "Les Terroirs de la Chapelle" 2023 is vinified plot by plot using indigenous yeasts. Aging takes place on fine lees for 18 to 24 months, using a variety of vessels including stainless steel tanks, foudres and clay jars. No chaptalization is used in the process. Clarification is carried out with natural agents before a light filtration.

Color
This white wine reveals a delicate golden hue, with a subtle brilliance that reflects optimal berry ripeness.
Nose
The bouquet opens with mineral and citrusy aromas, marked by touches of gunflint. With aeration, it reveals notes of juicy pear, white grapefruit and delicate honey, along with iodine-like accents.
Palate
The palate offers a silky, sleek texture, carried by a lively, crystalline freshness. The acidity gives the wine crisp structure, allowing citrus and white fruit flavours to shine, before stretching into a persistent, subtly saline finish.
Service and storage
This wine can be enjoyed young for its freshness, but has the structure needed to evolve favourably in the bottle until around 2030.
Food and wine pairing
This wine pairs beautifully with oysters, delicate seafood or grilled white fish. It also goes very well with white meats in creamy sauces, such as poultry with mushrooms or veal escalope, as well as fresh goat's cheese or gougères as an aperitif.
