Food and wine pairings
This Morgon will pair beautifully with grilled red meats, coq au vin, or aged cheeses such as Comté or Saint-Nectaire.
Serving and cellaring
To fully enjoy the Javernières 2023, it is best served at a temperature between 15 and 17°C. A light decanting for one hour will allow the wine to reveal all of its aromatic complexity.
A characterful Morgon from the Javernières lieu-dit
The estate
Founded in 1989 in Beaujolais, the Jean-Marc Burgaud estate was born when its founder, a graduate in viticulture and oenology from Beaune, leased three hectares of vines. Today, the property spans 19 hectares established on the Côte du Py in Morgon. Jean-Marc Burgaud applies his Burgundian training here, with semi-carbonic whole-cluster vinifications, indigenous yeasts, and careful aging in barrels. Named a Beaujolais favorite by Revue du Vin de France in 2025, the estate produces age-worthy wines that embody the region’s elite.
The vineyard
Javernières comes from the namesake lieu-dit located on the lower slope, southeast of the Côte du Py in Morgon. The 60-year-old gamay noir à jus blanc vines are gobelet-trained and grow on decomposed schist and alluvial soils. This distinctive terroir gives the wine its unmistakable personality. The harvest is carried out by hand to preserve the integrity of the grapes.
Vinification and aging
Javernières 2023 is made using a traditional semi-carbonic maceration method. Whole grapes are vinified parcel by parcel for 12 days at a temperature of 25 to 26°C. The free-run wine and press wine are then blended. Aging takes place for a year in six-year-old barrels, followed by three months in tank. Bottling takes place in December.
