Tasting

Appearance
This wine reveals a beautiful pale yellow hue, illuminated by bright green reflections.

Nose
Particularly expressive and remarkably pure, the aromatic bouquet opens with notes of citrus fruits such as lemon and grapefruit. It is then enriched with delicate scents of flowers and white-fleshed fruits, all underpinned by an elegant mineral imprint.

Palate
The tasting reveals an exceptional texture as well as great complexity. With remarkable precision, this wine offers vibrant freshness and strong minerality. The experience concludes with beautiful tension and lingering salinity.

Food and wine pairings
This cuvée pairs wonderfully with noble fish such as turbot or sole meunière. It also accompanies seafood, fish in cream sauce, or a goat cheese such as aged Crottin de Chavignol to perfection.

Serving and ageing
To fully appreciate the Sauvage 2025, it is recommended to serve it at a temperature of 12°C, ideally after decanting for one hour. Endowed with excellent potential, this wine can be cellared and enjoyed until approximately 2045.

The estate
Founded in 1987, the Pascal Jolivet estate has become a true benchmark in the heart of the Loire Valley. Still run today by its current owner, Pascal Jolivet, the House cultivates an extensive vineyard of 180 hectares spread across the region's flagship appellations and Touraine. Renowned for its low-intervention approach and its commitment to organic farming, this prestigious brand strives to produce wines of great purity, faithfully reflecting the identity of their terroirs of origin.

The vineyard
The grapes used for this cuvée come from old vines carefully selected in the villages of Champtin and Crézancy-en-Sancerre. Ideally planted on south-facing slopes, these parcels benefit from an exceptional terroir composed of clay-limestone soils and Kimmeridgian marls. This Sancerre vineyard is cultivated in accordance with the principles of organic farming, thereby promoting the concentration and quality of the berries.

Vinification and ageing
After a manual harvest, the whole bunches are gently pressed. The must then undergoes a light cold settling. The making of the Sauvage 2025 continues with a 100% natural vinification, carried out using indigenous yeasts, in temperature-controlled stainless steel tanks. Finally, the wine benefits from a meticulous 9-month ageing on its fine lees, giving it greater substance and complexity.
