Tasting notes
Appearance
With a beautiful crystalline brilliance, the colour is a pale yellow with delicate golden highlights.
Nose
Marked by great mineral purity, the bouquet opens with an elegant reduction, revealing aromas of toasted brioche and candied citrus fruit. With aeration, subtle floral notes of honeysuckle and sage emerge, along with a deep chalky backbone.
Palate
At once generous and invigorating, the palate stands out for its remarkable acid tension. The whole stretches out at length into a persistent finish, underscored by delicate saline bitterness.
Food and Wine Pairing
This great white wine will pair wonderfully with scrambled eggs with black truffle and toasted hazelnuts, raw fish, fresh goat's cheese, or fine roasted white meats.
Serving and Cellaring
To fully enjoy its aromatic profile, we recommend decanting Les Abeilles Chardonnay 2024 for about 45 minutes before serving it at a temperature of 11 to 12°C. Approachable today, this wine can be cellared until approximately 2038.
The Mineral Purity and Tension of a Great Vin de France by Pierre Girardin
The Estate
Heir to a long Burgundian family line, Pierre-Vincent Girardin officially founded Pierre Girardin in 2016 in Meursault, France. Initially drawing on a few hectares of prestigious terroirs passed down by his father, the young owner and winemaker has rapidly expanded his vineyard. Today managing around 13 hectares in Burgundy and 6 hectares in the Jura, he has established himself as one of the rising figures of his generation. Equipped with a modern winery since 2019, the estate enjoys international acclaim thanks to wines that combine precision, purity and respect for the identity of their terroirs.
The Vineyard
Although marketed as Vin de France, this cuvée comes from a plot located in the Sud Revermont, in the Jura. Facing due south, these old vines, grown from a massal selection planted in 1959, thrive on Bajocian limestone soils. Farmed under organic conversion, without chemical fertilisers or pesticides, this low-yielding terroir promotes optimal concentration in the berries.
Winemaking and Ageing
The grapes are harvested by hand. Whole bunches are fermented with indigenous yeasts. Crafted in a topped-up Burgundian style, Les Abeilles Chardonnay 2024 is aged for approximately twelve months in new oak barrels (demi-muids), followed by maturation in stainless steel tanks on the lees. To preserve its full integrity, the wine is bottled without fining or filtration.
